4 eggs
2 cups white sugar
1 1/2 cup oil
1 3/4 cup pumpkin (small can)
3 cups all purpose flour
1 tbsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 cups raisins (optional)

Beat eggs slightly. Add sugar, oil, pumpkin and beat thoroughly. Add dry ingredients and mix until smooth. Stir in raisins.
Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar. Bake at 375 for 15-20 minutes
This recipe make 18-24 good size muffins.

3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips

DIRECTIONS:
1. Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners.

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour

1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
2 In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
3 Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

3 In a medium bowl, mix the flour, baking soda, baking powder, cinnamon and salt. Blend into the egg and pumpkin mixture. Fold in the chocolate chips. Transfer to the muffin pans.
4 Bake in the preheated oven 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Remove muffins from pans, and cool on a wire rack.
Yield: 24 - muffins.

Quick & Easy Pumpkin Muffins

1 c. of pumpkin (canned "or" fresh)
2 slightly beated eggs
1/2 c. of water
1 tsp. of cinnamon
1/2 tsp. of nutmeg
1/2 tsp. of ginger

1/2 c. of sugar
1 tsp. of baking soda
1/4 tsp. of baking powder
1/2 c. of melted shortening
1 3/4 c. of flour
1/4 tsp. of salt

Directions
First you want to blend the pumpkin, eggs, water, and shortening in a bowl.
Then you want to sift remaining ingridients and add to pumpkin mixture.
Next you want to grease muffin pan and fill cups with muffin mixture.
Bake at 350 degrees about 30 min.
Serve.
