New Years dinner?!
How do you think it would turn out to cook those all together in a crock pot?

Ham or ham-hocks are usually used with collard greens. This recipe calls for very little ham. I would not use the pork, though., since it will give the stew a very different flavor.
COLLARD AND BLACK-EYED PEA STEW
2 c. chopped cooked ham
1 tbsp. vegetable oil
3 c. chicken broth
1 (16-oz.) package frozen chopped collard greens
1 (10-oz.) package frozen diced onion, red and green bell peppers, and celery* (see note below)
1 tsp. sugar
1 tsp. seasoned pepper
1 (16-oz.) can black-eyed peas, drained
Sauté ham in hot oil in a Dutch oven over medium-high heat 5 minutes or until lightly browned. Add broth and next 4 ingredients; bring to a boil. Cover; reduce heat to low, and simmer, stirring occasionally, 15 minutes. Stir in black-eyed peas, and cook 10 more minutes.
Note: Substitute 1 chopped onion, 1 chopped red bell pepper, 1 chopped green bell pepper, and 1 chopped celery rib if desired. Makes 6 to 8 servings.
in 2 crock pots I hope.. mixing the collards and black eye peas don't sound to appealing in my opinion.
But separately.. sounds great.. you could always do some cabbage for wealth too.
it would be a delicious stew. serve with rice.
use 2 different crocks and it sounds great, but together umm kinda ew.

Don't mix them all together! But I would do the Pork in the crock pot and add carrots and potatoes during the last two hours.
Or...... just cook the pork in the crock pot and during the last 45 minutes.....add bar-b-que sauce and spices...
