Leftover mushroom filling--what should I do with it?!
Answers: I made little mushroom tarts for appetizers for a party, but I ran out of tart shells long before I ran out of filling. It's a pretty straightforward filling recipe: minced sauteed mushrooms (cremini and reconstituted porcini), shallots, thyme, a little champagne vinegar and a little lemon juice, a pinch of nutmeg. The obvious thing to do with it would be to toss it with pasta, but I'd rather do something more original. Does anyone have a good idea for me? Thanks!
Butterfly a pork loin roast, place slices of proscuttio, mushroom filling and shaved pecorino on pork, roll and tie. Roast at 350 degrees for an hour. Let rest for 20 mins. in a warm place then slice and serve with garlic bread and green salad. Yum. Maybe a glass of Prosecco too?!
Add some cream and simmer. Saute some chicken breast pieces or a whole filet and when done, add to the sauce. Pour that over pasta or rice.
I would just toast up some slices of bread, spread on the filling and have myself a good ole' time! lol! Or you can fold it into a nice omelet or make yourself some savory crepes!
Cook up some big shell pasta till aldente and put it in them and bake it with alfredo sauce on top.
Mix with a can of Campbell's cream of mushroom soup, add one egg and grated cheese. Line a pie plate with old bread or sliced sandwich bread. Spread the mixture, top with more grated cheese and dot with butter and some paprika. Bake. Will come out like a quiche.
Spread it on toast with an egg on toast for breakfast in the morning.
I think if you heated it up it would be great served as a condiment for a great steak!

Stuff crepes with it
Mix it with ground chicken and stuff canelloni, pour a bechamel over them and sprinkle with a little parmesan and voila! chicken/mushroom canelloni
I think it would make a very nice vegetarian calzone filling maybe with a white sauce or added grilled chicken.
I'd sautee vegetable( mushroom, artichoke,zucchini, carrot, onion etc) and add your leftover. Add lemon zest(if you have lemon handy) ,sea salt and pepper to taste. Squeeze lemon juice. Sprinkle chopped parsley or cilantro leave.
Maybe if you have filo pastry then wrap them up in triangles and have for next time
