SPICY TOMATO SALAD.....Would you happen to have a recipe for that to share with me?!
6 large tomatoes
1/2 red onion
1 garlic clove
3 T olive oil infused with hot pepper
4 large basil leaves or 1 tsp dried basil
salt and pepper to taste
Cut tomatoes into large chunks. Do not make then all uniform pieces. This lets more of the juice out into the "dressing". Slice onion very thin so they are see through. Squish garlic with something flat on the bottom. For example you can use the flat side of a large knife or the bottom of the oil bottle.
Combine these in a bowl with the rest of the ingredients. Mix well and let sit. The longer you let it sit the stronger the flavours will taste.
Before serving remove the hunk of garlic and discard. Serve with crusty Italian bread for dipping.

Spicy Tomato and Pepper Salad
4 cups peeled, seeded and cubed tomatoes
2-1/2 cups roasted, peeled and julienned green bell pepper
3 cups halved and slice cucumbers
2 tablespoons seeded and minced fresh red chili or jalapeno pepper
1 tablespoon fresh lemon juice
2 tablespoons olive oil
? teaspoon ground cumin
1 tablespoon minced garlic
2 tablespoons coarsely chopped fresh Italian parsley
2 tablespoons coarsely chopped fresh cilantro
Salt and freshly ground pepper
In a large bowl, combine the tomato, pepper, cucumber and chili pepper. In a small bowl, whisk the lemon juice, oil, cumin and garlic. Pour the dressing over the vegetables and toss gently. Fold in the parsley, cilantro, salt and pepper. Chill until ready to serve.
Get your self some good Roma tomatoes or even better yet, some Jersey tomatoes (beef steak).
+Rub your salad bowl with a clove of garlic (save the part that's left)
+Slice up a Bermuda onion (red onion)
+small piece of Feta cheese (Greek cheese) broken into pieces
+Hand full of Kalamata olives
+Small head of torn Ice Berg lettuce
+Small bunch of Watercress (make sure it's got some heat to it. Ask the green grocer if it's spicy tasting)
+Good Spanish or Italian virgin olive oil
+White wine vinegar
+Salt & Pepper to taste
Cut up the tomato, add to the bowl. Add everything else. chop up the remaining piece of garlic and add. Add oil vinegar and mix - count 32 times to mix. S&p to taste.
