It's a Mom and Daughter dinner nite, what can we make?!


Question: We are not too picky, but we'd like something fast and easy, or at least something we can put in the oven and not have to watch, any ideas??
Hurry, I got 15 minutes before I go get her from work and shop, please!!

Baked spaghetti!

but a frozen stoffer's lasagne and make some garlic toast.

**A tossed green salad and pudding for dessert and

CHICKEN ON THE RANCH

Number of servings: 2 to 4

INGREDIENTS
1 tbs butter
2 to 4 chicken breast halves or thighs( thawed)
1/3 cup onions
1/3 cup of Ranch dressing or 2 level tsps, dry Ranch salad dressing
2 cups rice
4 cups hot water

INSTRUCTIONS
In a large frying pan, sauté onions until just tender . Add rice and
heat until rice starts to lighten. Add hot water, Ranch dressing and stir
until blended. Bring to a simmer and place chicken on top. Cover and let
simmer for 20 to 25 minutes. Turn off the heat, lift lid and place a
paper towel over the top, then replace the lid. Let stand for 5 minutes
more.

My mom and I both love these enchiladas. Cut the recipe down if you want!

Lite N' Spicy Enchiladas
16 soft taco corn tortillas
cooking spray, for sauteing
1 1/2 lbs chicken strips, cut into small cubes
1/2 small onion, chopped
2 jalapenos, diced
salt and pepper
1 (12 ounce) can fat-free refried beans
1/4 cup chicken broth
1 tablespoon dried cilantro
1/2 teaspoon chili powder
a pinch of cinnamon
1 (12 ounce) can chili (turkey or vegetarian chili work well too)
10 ounces your favorite enchilada sauce
10 ounces grated low-fat cheese, of your choice,save some for the top
--In a saute pan sprayed with cooking spray, saute that chicken, onions, and jalapenos on high to medium-high until the chicken is no longer pink, set aside Meanwhile, in a small sauce pan, stir together the refried beans, chicken broth, cilantro, chili powder, and cinnamon. Bring mixture to a soft boil on medium heat, set aside Heat the soft taco tortillas as directed on the package, set aside Preheat oven to 350 degrees, and spray a 9 inch-13 inch pan with cooking spray To assemble enchiladas: place one tortilla on counter top, spread on 1-1 1/2 tablespoons of the refried beans, place a thin line of the chicken mixture, a little off centered, across the tortilla. Spoon a thin line of the vegetarian chili across the chicken mixture, and sprinkle with a little cheese. Roll and place in the prepared pan After all the enchilatas have been rolled, pour the can of enchilada sauce over them and sprinkle with the saved cheese. Bake for 10-15 minutes, or until the cheese is bubbling.

Another idea is breakfast! French toast is very easy to make for just a few. Add some eggs or an omelette, fruit, and coffee!

Baked ziti.

Boil the ziti per package directions.
Put in casserole dish while still hot.
Stir in with 1/2 package of mozzerella cheese and 1/2 cup bottled sauce.
Cover with sauce.
Put a layer of rest of mozzeralla on top.
Bake at 325 until cheese is melted throughout.

Dish with a big spoon.

Italian bread and a salad from the grocery store salad bar on the side.

Done.

I'm making stuffed peppers tonight. They are quite easy and very tasty! Here is the recipe I use:

Although I tweak it a little bit by adding a handful of shredded cheese to the mix before I stuff the peppers. They always come out so good - never dry out on me :)

I am confused. If you don't want to spend much time or attention cooking; you aren't too picky and you are in a hurry, why don't you go out for dinner. It seems like it would be more fun for you.

Spaghetti and sauce is easy and you can work on the garlic bread. Make your own, you'll never buy it again if you do. I use 3-4 cloves of garlic, take a sharp knife flatten the cloves and chop fine. Soften a little bit of butter, add a little mustard, salt, thyme, oregano, and tiny bit of chicken bouillon. Mix well, slather on the bread.Hopefully you have a french/itlian loaf around, wrap in foil and bake in the oven.
