Quick Mexican Stew
4 boneless, skinless chicken breasts cut into 1-inch cubes
1 green bell pepper chopped
1 red bell pepper chopped
2 cloves garlic minced (jar garlic is fine)
2 Tbl olive oil
2 cans (approx 15oz each) stewed or diced tomatoes
1-15 oz can of pinto beans in sauce
1 cup salsa (you choose how hot)
1 tsp chili powder.

Garnishes (optional)
Avocado diced
Green onions chopped
Sour cream
Cheddar cheese grated


In a large sauté pan, or soup pot, saute the chicken, peppers and the garlic in the olive oil until the chicken is done. Do this on medium high and keep cooking until the chicken has no more pink remaining in the middle. Stir often. I always just take out one of the bigger chunks and cut it open to check.

Then add the other ingredients up through the chili powder and bring to a simmer. Simmer on medium for about 30 minutes or until it's as thick as you'd like it.



Chow Mein Noodle Hot Dish
1 lb ground beef
1/2 onion chopped
1 cup frozen sliced carrots
1 cup frozen cauliflower
1 can cream of mushroom soup
3-4 stalks celery chopped
2 TBS soy sauce
1/2 tsp white pepper
1 12-ounce bag chow mein noodles

Preheat oven to 325 F.
Fry hamburger and onion breaking up hamburger into small pieces.
Drain and place in large baking pan.Mix vegetables, soup, celery, soy sauce and pepper, then combine with meat in pan. Fold in 2/3 of chow mein noodle (8oz), cover
and bake for about an hour.Sprinkle remaining chow mein noodles on top. Put cover back on and bake another 15 minutes.



SLOPPY JOE TURNOVERS
1 pound - lean ground beef
1 cup - onion, chopped
1/4 cup - ketchup
2 tablespoons - chili sauce
1 teaspoon - cider vinegar
1 (12 oz) can - refrigerated biscuits

Cook ground beef and onion in a large skillet over medium heat,
stirring frequently, until beef is browned and crumbly and onion
is tender, about 8 minutes. Drain. Add ketchup, chili sauce and vinegar to beef and onion; mix well. Cook, stirring constantly, 1 minute. Cool 15 minutes.
Meanwhile, preheat oven to 375 degrees. Separate dough into 10
biscuits. Press or roll each biscuit on lightly floured surface
to a 6-inch round.Spoon about 1/4 cup beef mixture onto half of each round. Fold
round in half over filling. Press edges together carefully to
seal. Place on baking sheet. Bake turnover until golden, 15-18 minutes. Serve warm.
* It is important to let the beef mixture cool; if the filling is too hot, it can melt the biscuits.



Cowboy Chili
1 1/2 pounds ground beef
1 onion, chopped
1 (14.75 ounce) can cream-style corn
1 (15 ounce) can chili with beans
1 (15 ounce) can baked beans with pork
1 (15 ounce) can tomato sauce
1 (4 ounce) can diced green chiles
Crumble the ground beef into a large skillet or Dutch oven over medium-high heat. Add onion; cook and stir until beef is no longer pink. Drain off grease. Reduce heat to medium-low and stir in the corn, chili with beans, baked beans, tomato sauce and green chilies. Cover and simmer for 30 minutes, stirring occasionally.



IMPOSSIBLE GREEK SPINACH & FETA QUICHE
6 oz fresh spinach
6 oz crumbled Feta cheee with tomato and basil
1/2 onion, chopped
1 tomato, chopped
1 1/3 cups milk
3 eggs
3/4 cup Bisquick
1/2 tsp salt
fresh ground pepper, to taste
Preheat oven to 400°F and grease a 10" pie pan and set aside. Steam the spinach while assembling the other ingredients and chopping the onion and tomato. In a medium bowl combine milk, eggs, Bisquick, salt and pepper. Set aside. Combine the spinach, onion, tomato and Feta and place in the bottom of the pie pan. Pour the Bisquick, milk and egg mixture over the top. Bake at 400°F for 25-35 minutes, until puffed and set.


With these recipes you can cut the amounts to make them into smaller recipes or save them and serve them on a different night as leftovers. I don't know how well any of them freeze, but you could probably try that with the casseroles and stew/chili. Hope these help!
