Is it okay to use left over marinade to cook with as a sauce?!


Question: I am making fried rice today...and have marinaded my chicken and shrimp overnight. Is it okay to use the left over marinade as my sauces with which to cook? I will be cooking it with my rice so I think it will be okay. Any thoughts?

If you are going to then boil it first to kill the bacteria

I've never heard of it being a problem, and I do it too. It makes the flavor stand out more, as well!

You should never reuse marinade that you have had meat in for anything, due to the bacteria and blood from the meat.

I've done it as long as the sauce reaches the same temperature (yeesh cant spell that word today) as the meat. There is no reason if it reaches proper cook temperature not to. If I am making a roast and marinade before hand I drop it right in the roasting pan with the meat. Neve rhad a problem
