I need a recipe for an angel food cake topping?!
Answers: I don't care for the gelatin, custard or whip cream type toppings. I am looking for something that I can serve with or pour onto it. I have on hand a bag each of frozen strawberries, and blueberries. I also have lemon juice available. Does anyone have any ideas. I was thinking about a glaze, but was hoping for something a little more creative. The cake that I am topping was made with lemon extract. Thanks and Happy New Year!
Just use your strawberries and blueberries and make this sauce! Mmmm!
RASPBERRY SAUCE
Good for ice cream, cheesecake, or topping other desserts.
2 quarts raspberries - fresh or frozen
1 cup sugar (or more to taste)
3 Tablespoons corn starch
teeny pinch salt
Place the raspberries, sugar and salt into a large saucepan. Cook over medium heat, stirring often, until the mixture boils. Place the cornstarch into a small bowl. Slowly stir juice from the raspberry/sugar mixture into the cornstarch until a smooth consistency is achieved. Slowly pour the cornstarch mix into the raspberry mixture stirring constantly. Keep stirring until the mixture thickens slightly. Remove from heat. Serve warm or cold.
Take your strawberries, mash like for strawberry shortcake, add some blueberries...pour over cake...simple....sounds good!!
PS. You could add some brandy or rum to the sauce...
ANGEL FOOD CAKE TOPPING
1 (12 oz.) Cool Whip
1 sm. pkg. vanilla instant pudding
1 (20 oz.) can crushed pineapple
Mix dry pudding and pineapple. Let stand for 5 minutes. Fold in Cool Whip. Chill. Serve over angel food cake. If topping is too thin, pop into freezer for a short time before serving.
TOPPING FOR ANGEL FOOD CAKE
1 (6 oz.) can frozen orange juice
1 lemon
3/4 c. sugar
1 tbsp. butter
2 tbsp. cornstarch
Add enough water to orange juice to make 2 cups of juice. Heat liquids and thicken with cornstarch. Cook until clear. Cool.
Drain 1 (11 oz.) can mandarin oranges and 1 (2 1/2 size) can sliced peaches. Add fruit to above. Serve on angel food cake. Top with whipped cream or Cool Whip. Easy and pretty. Oh yes, it is so good, too!

why not place the stawberries and lemon juice in the blender with some vanilla yogurt. pur that onto the cake, and top it with the blueberries, unfrozen of course.
just thaw the fruit and serve it over the cake. for a delicious and elegant touch, melt some dark chocolate and thin with a tiny bit of milk, stir until a consistent texture and drizzle over the cake before serving. dark chocolate and fruit are a yummy combination.
Take 2 Tbsp. lemon juice and add about 2 cups powdered sugar....makes an awesome glaze! You can also thaw out the strawberries and blueberries and add a little white sugar to them and spoon them over the angel food cake.

This will end up more like a pie filling, but will make a nice topping.
Defrost your berries and reserve the juice. I use Juicy Juicy berry juice, but any would do. Take about 1/2 c. of juicy juice and mix in about 1 tbsp. of corn starch. Pour about 3 c. of the juice (including your reserved juice) in a pan and bring to a simmer, then whisk in the corn starch mixture. You want it to be the consistency of a thin gravy, it will thicken as it cools. Once it is cool add your berries, the juice of your lemon with a little bit of the zest. Pour over your cake.
