Pork Sate with Peanut Dippping Sauce Recipe courtesy
1 tablespoon minced fresh lemongrass (from bottom 6 inches of stalk)
3 tablespoons fresh lime juice
2 tablespoons dark brown sugar
1 tablespoon soy sauce
1 garlic clove, minced
1 tablespoon grated ginger
3/4 pound pork, tenderloin, trimmed, cut into 3-inch -- long, 1/2 inch wide, 1/4 - inch thick slices
12 (8) -- inch bamboo skewers, soaked in water 30 minutes
Mix lemongrass, lime juice, sugar, soy sauce and garlic in large bowl. Add pork; toss to coat with marinade. Let stand 30 minutes to 1 hour.
Preheat broiler. Thread 3 pork strips on each skewer. Grill until cooked through, about 3 minutes per side. Pour sauce into bowl; set in center of platter. Sprinkle with green onion. Surround with pork skewers and serve.
Peanut Dipping Sauce:
1/3 cup smooth peanut butter
1 garlic clove
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 teaspoon sugar
1/8 teaspoon cayenne, or to taste
1/3 cup water
In a blender blend together the peanut butter, the garlic, the lime juice, the soy sauce, the sugar, ginger, the cayenne, the water, and salt and pepper to taste until the mixture smooth and transfer the sauce to a bowl. The sauce may be made 2 days in advance and kept covered and chilled.
TERIYAKI PINEAPPLE PORK CHOPS
1/4 c. firmly packed brown sugar
1/4 c. soy sauce
1/4 tsp. garlic powder
8 oz. can pineapple slices in it own juice, drained, reserving juice
4 center cut pork chops, 1 inch thick
In 12 x 8 inch glass baking dish, combine brown sugar, soy sauce, garlic powder, and reserved pineapple juice; mix well. Place pork chops in marinade, turning to coat all sides. Cover; refrigerate 6-8 hours, turning chops once.
When ready to barbecue, drain pork chops; reserve marinade. Place pork chops on grill 4-6 inches from medium high coals. Cook 20-30 minutes or until fork tender and no longer pink, turning once and brushing frequently with marinade. Place pineapple slices on grill during last 8 minutes or cooking; cook until thoroughly heated, turning once and brushing with marinade. To serve, place pineapple slices on top of pork chops.
Pork with Peppers & Pineapple
1 LB. pork
2 Tbsp. soy sauce
2 Tbsp. cornstarch
1/2 cup pineapple juice (drained from can of unsweetened pineapple chunks)
3-4 Tbsp. vegetable oil
1 cup chopped green pepper
1/2 cup thinly sliced carrots
1 cup pineapple chunks
Serves 4
1. Slice pork thinly. (Its easiest to do when meat is still partly frozen.)
2. Combine soy sauce and 1 Tbsp. cornstarch in a bowl. Add pork to this mixture, stir and set aside.
3. Mix remaining cornstarch with sugar and 1/2 cup pineapple juice. Set aside.
4. Heat 3 Tbsp. of oil in a large skillet or wok.
5. Add pork to the skillet and stir-fry 4-7 minutes, or until meat is white all the way through.
6. Add pineapple juice mixture to meat and blend thoroughly. Remove from skillet and set aside.
7. If necessary, add up to 2 Tbsp. of additional oil to skillet. Stir-fry green pepper, carrots, and pineapple chunks for about 3 minutes. Blend thoroughly with pork and serve with rice

Perfectly Potato Cheddar Chow Mein
Ingredients
2 Tbsp. Honey Teriyaki Sauce
1 Tbsp. Garlic Garlic?
Perfectly Potato Cheddar Soup Mix
2 cups cooked, diced chicken, turkey or pork
1/2 cup onion
1 cup celery
Small can sliced mushrooms (optional)
3 - 3 1/2 cups hot water
Prepared white rice or chow mein noodles
Directions
Combine first 8 ingredients in large pan; simmer 25 minutes. Serve over rice or chow mein noodles. Makes 4-5 servings.
