Do I need to let my black eyed peas soak overnight before I cook them?!
Answers: Some people do it that way. Personally, I use a crock pot. I wash the peas first, then put them in the slow cooker, fill it about half way up with water. I usually add some onion flakes and salt. Sometimes I add a little bacon or ham. Let it cook all day on low, or about 5 hours on high. It always comes out perfect. I serve it over rice. Full menu would be salad, pork chops or pork tenderloin, baked sweet potatoes, rice and black-eyed peas. HAPPY NEW YEAR!!

i boil a big pot of water, remove from heat, then add the beans and cover. 1 1/2- 2 hrs is sufficient. got this idea from the joy of cooking. good book.
Some people soak them and others don't. I find the peas to be plumper when soaked overnight. My father added baking soda to the soak water so the beans won't give you gas. It really works, I don't know how. So soak if you want or don't it's up to you.
There are two ways to do this:
1) Soak overnight in cold water. They will soak up water, so keep adding water to cover them or add enough so that you won't have to get up in the middle of the night to add more. Drain the water, add fresh water and simmer. Takes about an hour.
2) Put them in a pan of water and bring them to a boil. Shut the heat off and put a lid on the pan and let them sit for 1 hour. Drain the water and put in fresh cold water. Bring to a boil and simmer until done. Takes about 1 hour.
