My mother's scalloped potatoes exactly as she dictated her recipe to me:
>One large russet potato for each person dining, and one or two for the pot.
>For every 6 potatoes, one large yellow onion, peeled and diced
>For every 6 potatoes, one pound sharp cheddar cheese, grated or diced
>For every 6 potatoes, one pint or more as needed whole milk
>For every 6 potatoes, 1/3 cup all purpose flour
>Salt and pepper
Scrub and peel potatoes. Cut length-wise, then into half moons, 1/3rd inch thick.
In a very large oven proof casserole (well oiled) layer potatoes, chopped onion, cubes of cheese, sprinkle flour, then add salt and pepper. Cover with whole milk. Stir to combine. Cover with lid or foil. Bake at 325 for one to two hours, stirring every 25 to 30 minutes, or until potatoes are soft and cooked through. Option: microwave for 20 minutes, stir, and cook for 20 more minutes. Add more milk if it becomes dry.
Optional: add slices or dice of cooked ham, roast pork, or smoked turkey.

Peel and thinly slice potatos. Put in cold water. Make a medium white sauce (for each cup of milk you use 2 Tbsp each of butter and flour, 1/4 tsp salt and a 1/8 tsp. of white pepper). Minced onion (1-3 tsp per cup of milk) makes a nice addition. Saute them in the butter before adding the flour when you are making the sauce.

Note: How to make perfect white sauce. Melt the butter, add the flour, salt and pepper and whisk together or use a spoon or whisk. When the mixture is bubbling,add HOT milk and whisk throughly until it is thickened.( I add garlic and onion powder,salt and pepper,paprika.)

Quantities are up to you....figure 3/4 - 1 c of potato and 1/2 c sauce per serving. I always make a extra sauce, just in case and it does reheat very well in the micro. Drain potatos, add to sauce put in greased pan. Bake uncovered at 350 until potatos are tender. If you don't want them to brown, cover with foil. If you are baking the meat course at another temperature this is very forgiving. It will take longer at lower temperatures and will brown too fast at higher temperature, if left uncovered. If it looks like it is getting a little dry just add a little hot milk and stir. It is very forgiving.
You can add just about any cooked meat to make a main dish.(Ham, sliced hot dogs or low fat polish sausage or Kielbasa.

Put cheese in the sauce you will have potatos au gratin.
