Make a simple soup with a quart or two of broth, a little meat, and tons of fresh veggies of your choice. Add a grain or potatoes if you desire, a spoonful of your favorite herbs, and you are set to go.

This recipe is endlessly flexible depending on what veggies you like, what you have available, and your grain and herb choices.
Don't forget the garlic and onions!

I also suggest you add vegetables to meals you already like - put zucchini or green pepper in your sloppy joes or spaghetti sauce, put broccoli and/or cauliflower in your macaroni and cheese, put spinach or green beans and carrots in your rice, and so on.

vegetable soup

Vegetable soup using beef broth can be loaded with whichever vegetables you have on hand. You can also add in some noodles or barley if you want. You could make beef stew with less meat and potatoes but more veggies.

veggie lasagna....made with whole wheat pasta......

..any kind of veggie stir fry with extra virgin olive oil.

couscous, (one of the healthiest foods you can eat,..)add veggies to that.

Stir fry meals. You can stir fry almost every vegetable you can think of, yummy and so good for you.

Here is a soup I make fairly often. Keep in mind that by its very nature though it's difficult to get 'wrong'.

In a crockpot, put:

Leftover meat (any kind but fish, diced
1 envelope instant garlic mashed potatoes
frozen vegetables (garden mix is best)
1 onion, diced
1 can tomato sauce
1 can tomatoes

Optionally, you could add:
1 jar mushrooms
1 stalk sliced celery
carrots
1 bay leaf
oregano, more garlic, rosemary, basil, thyme, sage
Or even about a cup of salsa for some extra spice!

Add water until your crock is full to about an inch under the rim. Give everything a good stir, then let simmer on low during the day. By evening, your soup will be ready.

Homemade Beef Stew ( I make it in the crock pot)

I make stir fries
I cut beef into strips (can use chicken or pork)
and brown in sesame oil. You can add a little soy sauce too. Then I add slices of mushrooms, carrots, red and green peppers, onions, snow or snap peas and mung bean sprouts. Then I make a thin gravy with the juice right before it is done.

I also like Tex Mex corn
I take drained corn, sliced peppers and onions and sautee them in butter in a cast iron skillet.
You can add any vegetables you want. Sometimes I brown some diced potatoes and then add the corn and other veggies.

I make Tiggers recipe too but I also add a can of beef broth and a can of whole tomatoes too.

Minestrone
"Minestrone means 'big soup' in Italian, and this soup is sure to satisfy even the biggest of appetites. Served with a crisp loaf of bread, it's a meal in itself! Garnish with grated Romano cheese."

Original recipe yield: 10 to 12 servings


INGREDIENTS
6 potatoes, peeled and cubed
6 carrots, chopped
4 stalks celery, chopped
1 onion, chopped
2 cloves garlic, minced
1 (15 ounce) can kidney beans
3/4 cup tomato paste
2 1/2 quarts water
1 1/2 cups seashell pasta
1 teaspoon dried oregano
1 teaspoon dried basil
salt and pepper to taste

DIRECTIONS
In a large pot combine the potatoes, carrots, celery, onion, garlic, beans, tomato paste and water. Cook over medium heat until all the vegetables are tender.
Transfer soup to a food processor or blender and puree until smooth.
Return soup to pot and stir in pasta. If desired add additional water to thin soup. Stir in the oregano and basil. Season to taste with salt and pepper. Cook over medium heat until pasta is al dente. Serve hot topped with freshly grated Romano.

Another thing I added that is not listed was sliced Italian Sausage,

anything indian! Look up indian recipies on youtube, there are lots!
