Question: I am looking for any recipes out there for one person/serving. I am sick of eating left overs for days and want to try some new stuff

Would be a little easier if we knew the sorts of things you like to eat. I cook for just myself...when my freezer is getting full of leftovers but I feel like something different I cook for just one.

Tuna Pasta Bake

55g dry pasta
1 small (110g) can of tuna
4 tablespoons ricotta cheese
1 zucchini, grated
6 pitted black olives
1 tablespoon chopped fresh herbs
1/2 cup tomato-based pasta sauce
30g cheddar cheese, grated

Preheat oven to 180 degrees, cook and drain pasta, Combine all ingredients except grated cheese. Spoon into a small baking dish. Top with grated cheese and cook for 15 minutes. Serve with a salad.

Thai Beef

2 teaspoons peanut oil
100g lean beef, sliced
1 onion, sliced
3 teaspoons fresh ginger, grated
1/2 cup green beans, chopped
1 carrot, sliced
2 teaspoons soy sauce
1 clove garlic, crushed
hot chili sauce (optional)
white or brown rice to serve

Heat wok or frying pan over medium heat. Add peanut oil. Add sliced beef and stir fry for 1 to 2 minutes. Remove beef from pan. Add onion and ginger and stir fry for a minute. Then add beans and carrot and stir fry for 2 minutes. Return beef to pan with the soy sauce, garlic and chili. Serve on rice.

I had asked the same question.... where do u live... if u were in my neighborhood i would invite u...

what do you have to work with??? if you have canned beans and tomato's, add some chili powder and meat..chili. if you have canned veggies, make a veggie soup. grilled cheese and tomato soup if you have it. hope this helps.

you can do lasagna in a smaller caserole dish and cut the noodles in half after you cook them or skip those noodles and layer ziti noodles with ricotta and cheese instead. only cook 1-2 pieces of chicken and throw the rest of the uncooked ones in individual freezer bags for next time.

If you want recipes for 1 serving, allrecipes.com is a good place to go, because you can manually change the servings in every recipe they have and print them out for yourself. :)

It is so funny you should ask that right now. I just got done going through all my cookbooks and regular books and gave a ton of them away. In there was a book called cooking for one. I gave it away this morning and I hate to ask for it back, but if you go to the library, I am sure you will find something there. Good Luck! and Happy New Year!

You can make whatever you like and just freeze the leftovers for another time so you don't have to eat the same things for days. Most things you make end up serving more than one person so if you are going to the effort of cooking may as well make enough to freeze for another day.

1-serving CHEESE puff

1 1/2 slices white bread or whole wheat bread (buttered)
1 egg
1/2 cup milk
1/4 cup shredded process American cheese
1/8 teaspoon onion salt
1/8 teaspoon salt
6-8 drops hot pepper sauce (optional)

Cut breads into strips; place butter sides down along the sides and on the bottom of 10-oz custard cup.
In a bowl, lightly beat egg; add milk, cheese, onion salt, salt and hot pepper sauce (if desired).
Pour into custard cup.
Place on baking sheet and bake at 350* for 35-40 min.
or until puffy and golden brown.
Serve immediately!

I cook for myself and my 5 year old every night, but her portions are so small that it's like cooking for one! I HATE leftovers and will not eat them, so I just cut down on all of my portions. When I buy meat at the store, I break it down into baggies and freeze them, so that when I want to make chicken, I take out a baggie with one or two breasts in there! Then I make fresh veggies, which you can control the serving size of, and usually white rice, or pasta packets, just cut the recipe in half!
Good luck...I know it's a challenge and it almost makes you not want to cook at all, huh?!

*************EASY TACO-CORN CHIP MEAL

Make your favorite chili or chili beans. Crush 1 large bag corn chips. Cover bottom of baking dish. Cover chips with chili (about 1/2 of it). Sprinkle with chopped onions as desired. Sprinkle with grated cheese or cheeses such as Velveeta, sharp cheddar or Mozzarella. Repeat layers.
Bake at 350 degrees about 15-20 minutes. Serve with salad or top each serving with chopped lettuce and tomato pieces and/or sour cream or salsa sauce. Experiment.

~CHICKEN DINNER FOR SINGLE COOK
1 chicken breast
1 pkg. or can undiluted cream of mushroom soup
1/2 c. water
1 tbsp. lemon juice
2 tbsp. sliced mushrooms
Dash of salt
Dash of sage
Wrap chicken in heavy duty foil. Combine soup, water, juice and mushrooms, sage and salt. Pour over chicken in center of foil. Bring 4 corners of foil together and fold and bring under chicken. Bake at 375 degrees for 45 minutes. If more than one eating add more of everything.
