I have an unusual question?!


Question: I love sweetbreads when prepared properly. I go to a little Greek restuarant once a month just to eat sweetbreads. I have tried to fix them myself once but the smell of the raw sweetbreads nauseated me. (No, I wasn't pregnant) Is there a special thing you do to them before preparing and cooking them? Any good recipes?

soak in water overnight,change water frequently
blanch in salted water 10 minutes,add alittle vinegar or lemon juice to keep them white and keep meat firm
rinse under cold water,peel off membrane and connective tissue
press between two trays ,put weight on top and refrigerate several hours
to prepare,either braise or split and bread and saute
