spinach (well drained), (cooked)mushrooms, green onions, a dash of Tabasco or red pepper....
my favorite 'quiche' recipe uses biscuit mix and makes its own crust
Base ingredients:
1-1/2 c milk
3/4 c biscuit mix (can use Jiffy or Bisquick)
3 eggs
salt & pepper to taste
Fillings (approximate measurements):
1/2 c to 1 c chopped cooked meat
3/4 to 1 c shredded cheese
3/4 to 1 c chopped (cooked or raw) vegetables
Grease a 9-inch pie pan. Preheat oven to 400F. Sprinkle filling ingredients into pie plate. Beat base ingredients till smooth. Pour into plate. Bake 40-45 minutes, or until knife comes out clean.
You can use a basic quiche recipe (pie crust, eggs & cream) Then saute your sausage just to brown a little and drain on paper towels. In the remaining oil, saute your chopped onion until translucent. Cut up some roasted red bell peppers and grate up some Gruyere cheese.
Put your peppers, sausage in the quiche pan lined with pie dough, scatter the sausage and bell peppers, season with salt & pepper, sprinkle about a cup of grated cheese and then pour your egg cream mixture over and bake at about 350 degrees F for about 50 minutes until the top is browned and the quiche is set.
Sounds like your recipe is heading away from France (quiche) and into Italy, sounds like this would better suited for a
Sausage Pepper and Onion Fritatta........basically an open faced ometette, or crustless quiche.....(and who needs all those carbs in the crust??? Especially this time of year?)

You've gotten some great answers, but I'd like to add that quiche is one of those "anything goes" type of things.
I've made many quiches just using up leftover bits of this and that and they've always been good.
Your idea with the peppers, onions and sausage sounds great, I think putting in some sharp cheddar would complete that wonderfully.
