Anyone have any meatloaf ideas?!
Answers: I want to make meatloaf tonight. On hand, I have the basics - ground beef, cracker crumbs and eggs. However, I don't have any onion or green pepper. What can I use to make it flavorful? For seasonings on hand I have salt, pepper, Lawry's seasoning salt, garlic powder. Will I just have to make it bland with the seasonings I have on hand or does anyone have any ideas?
I don't see anything wrong with the seasonings you have on hand. My husband doesn't like a moist meatloaf full of veggies, so I've always used garlic powder (start with 3/4 tsp per lb of meat). The Lowry's seasoning salt is fine to use; it has many seasonings, but remember you are likely adding salt from the crackers too. You can spice it up with teriyaki sauce, worchestershire sauce, catsup, barbecue sauce, picante sauce, etc.
My recipe:
1 lb ground beef
3/4 tsp garlic powder
3/4 tsp salt
1/8 tsp pepper
1 egg
1 Tbsp worchestershire sauce (or 2 Tbsp of thicker sauces), plus extra sauce for basting.
1 cup bread crumbs
Combine seasonings and sauce with egg, mixing well. Break up ground beef into sauce mixture and toss to coat. Add bread crumbs, and knead till well mixed. Form into loaf and bake as usual. Half way through cooking pour off accumulated grease. Baste with sauce and continue cooking till done.

if you dont like beef, replace that with turkey! it still tasts good, just not with the beef flavor.
I make it with chopped celery and shredded carrot, as well as the onion and green or red pepper. Maybe throw in a teaspoon of basil or thyme. Good luck!

Try this one, it's different..........Instead of using bread crumbs, you use Stove Top Stuffing as the "bread crumbs" and all the seasoning is in it already......This one's really easy, 5 minute prep time, 55 minutes in the oven......Enjoy!!!
1-1/2 lb. extra lean ground beef 1 can (10-3/4 oz.) condensed tomato soup, divided 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken 1 egg, lightly beaten 1 onion, chopped 1 tsp. dried thyme leaves 1/4 cup chili sauce PREHEAT oven to 350°F. Mix meat, 1/2 cup of the soup, stuffing mix, egg, onion and thyme. Press evenly into 8x4-inch loaf pan sprayed with cooking spray.
BAKE 55 min.
HEAT remaining soup with chili sauce in small saucepan. Spoon over meatloaf just before serving.
Use oatmeal (rolled oats) instead of crumbs. Use some ketchup in the mix. If you have some Worchestershire sauce, use it too. You can cut up or shread some zuchini into the meat before shaping.
For the future, always have onions and garlic on hand. Once I've peeled an onion, I cut the leftovers into quarters and keep in a glass jar in the fridge. A sealer (AKA Mason jar) will work or a jar from relish. The onion keeps a long time and doesn't smell up the fridge.
i think onoin is important but i bet any veggie would be good, sautee them first. i think zuchinni or yellow squash would be delish. I've got peppers & onions frozen 99cents at save-alot
Use the garlic powder and some ketchup or chili sauce. Any frozen veggies? Throw some of those in. Meatloaf is what you want it to be!
Squirt a bunch of ketchup in there when you knead
everything together.
I have added a combination of the following: carrots, onion, bell peppers, v8 juice, worcestershire sauce, tomato paste, mustard, garlic and pepper.
Long Time Family Meatloaf Recipe
1 lb. ground beef
1 egg
1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 med. apple or pear, chopped
1 tsp. pepper, black or red
1 tsp. low sodium salt
Ketchup or barbecue sauce
Your favorite cheese
3 slices bacon (optional)
Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
Remove from oven and allow to cool for a couple of minutes.
Do you have any other vegetables, like carrot, celery root, celery, etc.? (nothing starchy like potatoes). Chop fine and add.
I like to add lots of mediterranean seasonings (oregano, basil, tarragon, etc). And add a tiny pinch of curry powder. and lots of different types of pepper (black, white, red, no more than 1 tsp each).
If you have Parmesan cheese, you could sprinkle some of that into the mix to give it extra flavor =)
Barbecue sauce works well gives it a different twist as does a can of Manwich. I rarely make my meatloaf the same way I like to experiment. Any body who has tried my meatloaf has always gone for seconds and even thirds. In the future you might want to buy a bag of frozen onion and green peppers or cut up some yourself and freeze. We keep and bag of each in the freezer at all times.
Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce
Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.
