Side dish for Leg of Lamb?!


Question: I am looking for some side dish recipes for a 1.3lbs Leg of Lamb I am roasting in the oven. gotta be somethingthat I can make tonight before the new year. any suggestions?

A rice dish.

Mint Jelly
1 1/2 cups fresh mint, washed and packed
3 1/4 cups water
2-3 drops green food coloring
1/2 teaspoon lemon juice
1 (1 3/4 ounce) box pectin
4 cups granulated sugar
--Crush mint leaves (or a rough chop), add water, and bring to a boil. Remove from heat, cover and let stand 10 minutes. Strain and measure 3 cups of mint infusion. Add food coloring and lemon juice. Add Sure-Jell, dissolve and bring to a rapid boil. Add sugar. Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down, then cook 1 minute more. Pour into sterilized jelly glasses and seal. I processed in the steam canner for 10 minutes to insure a good seal.

Golden Parmesan Potatoes
6 cups potatoes, sliced 1/8 inch thick
3 tablespoons butter, melted,divided
1/2 cup grated parmesan cheese, divided
chopped fresh chives
--Preheat oven to 425. Rinse potatoes; drain on paper towels. Pat dry. Brush 1 T of butter onto bottom and side of 9" pie plate. Toss potatoes with combined remaining 2 T butter and 1/4 c cheese; arrange potato slices, in several layers, on bottom and up sides of pie plate. Sprinkle with remaining 1/4 c cheese. Bake 1 hour or until potatoes are tender. Loosen potatoes from side and bottom of pie plate. Invert immediately onto serving plate; sprinkle with chives. Cut into 8 wedges to serve.

Oven Baked Onion Rings
1/4 cup plain breadcrumbs
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 medium onions, cut cross ways into 3/16-inch rings
2 tablespoons 1% low-fat milk
1/2 teaspoon salt
pepper
--Preheat oven to 350 degrees. Spray a cookie sheet with lite olive oil or other veggie oil. Mix bread crumbs, oregano & cayenne (mix these ingredients on a sheet of wax paper it will make the next step easier). Dip onion rings into the milk and allow the excess to drip back into the bowl. Dip into the crumb mixture. They won't be fully coated, don't worry they will still have a crunch (especially with Panko crumbs). Place onion rings in a single layer on the cookie sheet. Bake onion rings until the crumbs are golden and the onions are soft (approx 30 minutes). Sprinkle with salt & pepper and then serve.

Risotto
2 tablespoons butter
2 tablespoons olive oil
1/2 cup chopped onions
1 cup arborio rice
4 cups chicken broth
3-5 saffron strands
salt and pepper
grated parmesan cheese
--Heat butter and oil in pie dish, uncovered for 2 minutes on high. Add onion, stir, cook for 4 minutes on high. Stir in rice to coat, cook 4 minutes on high. Mix saffron into broth, add to rice, cook on high for 9 minutes. stir and cook on high for 9 minutes more. Let sit for a few minutes; add salt, pepper and parmesan cheese before serving.

Minty Peas and Onions
1/2 cup unsalted butter or margarine
20 ounces frozen green peas, thawed
1 medium onion, slivered
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon sugar
1/3 cup fresh mint leaves, packed,thinly sliced
--In a large skillet, melt butter or margarine over medium or medium-low heat. Cook butter until nut brown in color-about 7 minutes (but don't let burn- lower heat if necessary). Add peas, onion slivers, salt, pepper, sugar, and mint leaves; cook until onion is wilted and transparent and peas are tender, approximately 10 minutes. Serve immediately.

cut potatoes into wedges, place in baking dish, coat with olive oil [or veg.oil] season with salt, pepper, rosemary and thyme. bake at 350 for 45 minutes or til tender.

Side dish: Roast is already in the oven no real time for recipes here; steamed asparagus, peas, french beans, corn niblets. Harvard beets, creamed whipped potatoes, roast baby carrotsand potatoes & onions with the roast , carmelized carrots, sauteed leeks and/or Belgian endive with butter beans.

If you don't like mint you may like sour pitted cherries in light syrup.

Cous cous would be great, it's easy to make and light. It pairs really well with the lamb too.

You could jazz it up by adding some shredded carrots, toasted pine nuts, chopped parsely, raisins, baby tomatoes....
