The first couple of recipes may not be low-cal, but they're good (thanks to Rachael Ray on those).

LAYERED LEFTOVER THANKSGIVING CASSEROLE
Leftovers:
turkey
gravy
mashed potatoes
stuffing
green bean casserole
French Fried Onions
Grease a casserole dish that will fit the amount of leftovers you have. (I normally have to use a 13x9x2). Put stuffing as a bottom layer first, then place a layer of turkey. Put mashed potatoes (sweet and/or regular mashed potatoes; pour gravy over them.
Spoon the green bean casserole over potatoes and gravy, then top with French Fried Onions.
Heat in a 350°F oven for 20-30 minutes. Let cool and enjoy! (Great for potlucks as well.)


Thanksgiving Stromboli
Ingredients
1 tube refrigerated pizza dough, such as Pillsbury brand
2 tablespoons all-purpose flour or cornmeal
1 cup leftover cranberry sauce
3 cups leftover turkey, shredded
2 cups leftover stuffing
2 cups aged white cheddar cheese, shredded
2 tablespoons extra virgin olive oil (EVOO)
2 tablespoons sesame seeds
2 cups leftover gravy
Preparation
Pre-heat oven to 400°F
Break open the tube of dough and remove it from container. Dust your hands and lightly coat the dough with flour or cornmeal, then roll it out onto work surface. Stretch the dough out gently so that is an inch larger than when you first take it out of the roll (but in the same rectangle shape that it has initially). Spread the cranberry sauce in an even layer over the dough, making sure to leave an inch border around the circumference of the rectangle.
Layer the turkey and stuffing down the middle of the dough going from one corner to the opposite corner in a diagonal line. Cover the turkey and stuffing with the cheddar. Bring one corner of the dough up over the turkey mixture, then roll the dough on an angle to make a long roll that is thick in the middle and thinner on each end. You should have turkey mixture running down the middle with some filling exposed at each end.
Brush the stromboli with EVOO, then sprinkle the sesame seeds on top and pat them into the dough. Place onto a baking sheet and bake for 20-25 minutes, until evenly golden. Serve with leftover hot gravy alongside.

Turkey Creole
1? Bell Pepper, diced
3/4 c Celery, diced
24 oz Stewed Tomatoes
4 ? tsp Chili powder
3/4 tsp Salt (to taste)
4 c Turkey, cooked & cut up
6 c Rice, cooked
Put everything except rice in crockpot. Leave for most of the day. Serve over cooked rice.

Curry Turkey Stir-Fry
2 c Turkey; chopped cooked
1? tsp Curry powder;
1 tbsp Soy sauce
4 Green onions; chopped
4 Celery stalks; chopped thin
1 lb Fresh pea pods; snipped
1 Sweet red pepper; sliced
1 tb Cornstarch;
1? c Water
Heat a nonstick wok or skillet. Add the turkey, curry powder, soy sauce, and onions. Saute until the turkey is heated, about 2 minutes. Add the celery, pea pods and pepper. Stir-fry another 3 to 4 minutes. Add the cornstarch that has been dissolved in the water. Cook just until the liquid thickens.

Scalloped Turkey & Cauliflower

2 c Cauliflower florets
1? c Turkey stock
2 tsp Whole wheat or all-purpose flour
1 tsp Parsley flakes
2 tsp Onion flakes
1 tsp Salt
1/4 tsp Black pepper
? lb Turkey breast, cooked
Cook cauliflower in boiling, salted water for 6 min or until almost tender. Drain. Combine stock, flour and seasonings in a small saucepan. Cook and stir until mixture is slightly thickened. Place turkey breast in a greased baking pan. Arrange cauliflower around turkey breast. Pour sauce over turkey and cauliflower. Bake in 350 F oven 20-25 min or until heated through.

TEX-MEX TURKEY CHILI -Serves:6
Ever think of making chili with that leftover turkey?? Cooking Light did and this lo cal recipe is surprisingly good and when prepared in the microwave it couldn't be easier.
1 cup chopped onion
2 cloves garlic, minced
1 Tbsp vegetable oil
1 Tbsp chili powder
1 tsp cumin seeds
1 tsp sugar
1 (8-oz) can tomato sauce
1 (10 oz) can tomatoes and green chiles, undrained
1 (15 oz) can red kidney beans drained
2 cups shredded cooked turkey breast
3/4 cup water

Combine onion, garlic, and oil in a 2 quart glass measure. Cover and microwave at high 3 minutes or until onion is tender, stirring every minute.
Add chili powder and next four ingredients; stirring well.
Microwave, uncovered, at high 6 to 9 minutes or until slightly thickened, stirring mixture every 3 minutes.
Add remaining ingredients; stir well.
Microwave, uncovered, at high 6 minutes or until thoroughly heated.

You should mix it with any other holiday leftovers, and make a casserole, or mix it with the other leftovers on a sandwich.

serve with mashed potatoe and branston pickle, if your amerian, you probably havnt heard of branston pickle.. its like chunky relish

Leftover Turkeywich

left over turkey
mayonnaise or cream cheese
cranberries
bread stuffing mix
your favorite bread (I like french bread or a hearty sandwich bread)

Take your bread and cut in half if necessary.
Put mayonnaise or cream cheese on bread.
Then layer turkey, stuffing and cranberries on the bread.
Enjoy!

TURKEY LEFTOVER SURPRISE

1 (6 oz.) pkg. converted wild rice
2 tbsp. butter
1 lb. bulk sausage
3 c. leftover turkey, chopped
2 cans mushroom soup
1 can button mushrooms

Cook rice according to package directions, adding 2 tablespoons butter. Saute sausage and drain. Layer ingredients twice in this order: sausage, turkey, rice, soup and ending with mushrooms. Bake in a 400 degree oven until lightly brown, about 20 minutes. Chicken may be used in lieu of turkey.
