Would you have a recipe for rice that have garlic and herbs in it that you would share with me?!


Question: Garlic and Herb Rice
1can fat free chicken broth
1c instant rice
2oz parmesan cheese with garlic seasoning (mixed in to taste)
1/4 tsp black pepper
1 small carrot shredded
2tbsp chopped parsley
Bring broth to boil then gradually stir in rice. Cook til done. Remove from heat then stir in cheese/garlic mixture with chopped parsley.

Get a small saucepan with a cover.

Saute a cup of rice in two tablespoons of olive oil. Crush a clove of fresh garlic into it. Stir it around just about two minutes, then add 1-1/2 cup chicken broth (canned is good) and whatever herbs you like, maybe a 1/2 teaspoon. I use the bouquet garni or herbes de provence mix you can find in the dried spice section of the grocery store. Some people prefer fresh herbs. I think the dried ones are more consistent in flavor, and are more convenient of course.

Put the cover on the pan and cook according to the rice package directions. (they usually say very low simmer until liquid is absorbed and rice can be fluffed).

You can add slivered almonds to the garlic at the saute stage, or add a little grated parmesan at the end. Experimenting is fun.

Broccoflower? Risotto with Wild Mushrooms

Broccoflower? and wild mushrooms are sauteed and served in a creamy risotto with Parmesan cheese.

INGREDIENTS
1 tablespoon butter, unsalted
2 cups Broccoflower?, diced
2 cups assorted wild mushrooms, chopped
1/2 white onion, chopped
2 tablespoons garlic, minced
3 cups Arborio rice
9 cups chicken stock, unsalted
1 pinch fresh ground nutmeg
1/4 cup fresh herbs; tarragon, parsley, chives, diced
1/4 cup Parmesan cheese
Salt and pepper to taste


DIRECTIONS
Melt butter and saute Broccoflower?, mushrooms, onions and garlic for 10 minutes.
Remove sauteed ingredients and place aside. In same pan, cook the rice by adding chicken stock one-cup at a time stirring until well incorporated before adding the next cup. Once chicken stock is absorbed and rice is tender, stir in nutmeg, herbs and season with salt and pepper.
Once rice risotto is cooked, stir in the sauteed ingredients, salt and pepper to taste.
Stir in Parmesan cheese before serving.

Southern Dirty Rice

This recipe has been passed down for generations.

INGREDIENTS
1/4 pound chicken gizzards, rinsed
1/2 pound chicken livers, rinsed and trimmed
1 tablespoon vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
2 cups uncooked white rice
4 cups chicken broth
salt to taste
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 cup thinly sliced green onions


DIRECTIONS
Pulse gizzards in food processor, then pulse livers.
Heat oil in a large saucepan. Saute onion and gizzards over medium heat, stirring constantly, until meat begins to brown (about 5 minutes). Add livers and garlic and cook, stirring constantly, until brown (about 3 minutes).
Add rice and stir until coated with oil. Add broth, salt, pepper and cayenne pepper. Bring to a boil, then reduce heat to simmer. Cover and cook about 20 minutes, until rice has absorbed liquid. Sprinkle with green onion and serve.

If you want to do it the easy way, simply add garlic and desired herbs to your rice, water, salt and butter mixture....cook as usual. I do it this way all the time and it turns out quite tasty. :)
