** I would serve broccoli as a side
** Flavorings: onion, thyme, bay leaf, 2 whole cloves, and black pepper, a little salt.... and for the casserole itself I would add some onion, a little thyme, bay leaf, 2 whole cloves and black pepper
** brown the pork chops in a little oil & butter before adding them to the casserole dish

Substitute the potatoes for rice. Add other vegetables butting the root vege6tables that take longer to cook in first..

Since you're asking about spices, check out Penzy's. They have really fresh herbs and spices at really reasonable prices.

With pork, it depends on how spicy you want to go.

Pork is typically really good with cabbage (cooked or cole slaw) and potatoes (especially red potatoes).

For spices, just salt and pepper can be great. You might also try thyme, sage or - if you like spice - peppers or Tabasco.

BBQ sauce of any sort can also be really good with pork.

You need a veggie that can stand up to the pork, so you're on the right track with the veggies you mention. You might carmalize the carrots with a little sugar. A sweet taste always off-sets pork nicely.

Good luck!

Cinnamon adds a very interesting flavor. Also add sliced apples and a little sugar. You could also add some honey mustard.

I like tasting the pork chops and potatoes, so I would just put salt and a little pepper on mine.

Try rosemary and sage

pepper or paprika, garlic powder, and dried cilantro or parsley
and as for the vegetables,
serve them as a side dish

Dijon mustard with some parsley. If I find at home the recipe I used to make, I'll let you know. It did not include other vegetables, but dijon mustard should give some flavour to whatever healthy but relatively bland vegetables you may want to add, and it gives food a taste of fancy cuisine.

use 2 cans of campbell's cream of mushroom soup undiluted with 2 ounces of sour cream. salt and pepper.its out of this world

Pepper, sage, thyme, onion, and for a sweet touch.

I would suggest some baked potatoes and then you can do some sautéed mushrooms with onions and broccoli on the side if you'd like. Those seem like pretty good sides that you can’t go wrong with.

Best pork casserole sauce is roasted, then pureed red peppers, garlic and chilli. Before roasting, pour that over the meat and potatoes. Drizzle with olive oil! Delicious!!!
