Please, why my pizza is always hard? I'd like...?!

Bake it directly on the rack, not in a pizza pan.

dip it in the warm water, before u bake

Try cooking it at a higher temperature that way the outside gets crunchy and the inside stays soft.

You probably put the temp to high. or maybe this time try 2 add olive oil , and make sure u put the perfect amount of flour

you may need to add a little moisture to your oven by adding either a pan of water on bottom shelf or by heating your oven & getting a sheet pan and throwing a tray of ice cubes on it the make sure to close the door immediately after adding ice cubes this will creare stem which will give a good chew and crispness to your crust

Ingredients
4 cups Warm Water, divided
? cup Sugar, divided
3 packages Dry yeast
2 tsp Salt
1 tsp Oregano
1 tsp Garlic powder
3 tblsp Butter or margarine
3 tblsp Solid vegetable shortening
10-12 cups Flour
Preparation
1. Stir together 1-1/2 cups warm water and 3Tablespoons sugar. Add yeast, stirring to dissolve. Let stand Five minutes or until bubbly.
2. Mix in remaining 2-1/2 cups warm water, remaining 1 Tablespoon sugar, salt, oregano, garlic powder, butter, shortening and 5 cups flour.
3. Gradually add enough flour to make a dough. Turn out onto lightly floured surface and knead until smooth and elastic, about 10 minutes.
4. Place in a 2 gallon plastic bag and let rise in refrigerator until doubled in bulk.**
5. Use about 2 cups dough for each 15-inch pizza. Place dough in pan, that has been greased and lightly dusted with cornmeal, let rest about 10 minutes then push out with oiled fingers.
6. Partially bake crust 8-9 minutes @ 450.
7. Pizza crust can now be topped with favorite toppings or frozen for later use.
8. Bake an additional 10 to 12 minutes to complete baking.
**Note: Dough may be kept in refrigerator several days. Makes 4-6 pizza crust depending on size of pan used.

You want a soft dough, but not a sticky dough. If when you are kneeding the dough before you are shaping it, if it is hard and takes a bit of extra muscle, add a bit water. If the dough is sticky and clings too much to things, add a bit of flour. Before putting it in the oven, make sure you brush the dough with olive oil. Also make sure you are baking the pizza with just the sauce at first for about 10 minutes. Then add the cheese and toppings and bake for another 10. I believe I bake my pizza at 400 degrees.

A small pan of water on the bottom shelf of the oven helps too.

Try cooking it on a clay baking stone, it makes a huge difference.

1 bake it on a stone, a HOT stone...
2 bake the crust when it is COLD...
3 always check the expiration date of the yeast before you use it...
