Any ideas for baking zucchini? Something simple?!

I like zucchini stuffed. It lets the vegetable itself shine and with very few ingredients renders a wonderful dish. If the zucchini are small, slice in half and scoop out the interior with a spoon, leaving a 1/2" shell and saving the interiors which you will dice and saute with a little diced onion in a little butter or olive oil until just beginning to caramelize. Set aside, add a few tablespoons of Parmesan Cheese and some optional bread crumbs you may have around and stuff back into the hollow zucchini shells. Drizzle with olive oil, and bake at 350* until the squash is cooked through and the filling is nicely browned. If your zucchinis' are large, slice them cross ways, then into halves and proceed as described. Simple and delicious. This is the Italian manner of stuffing & baking many vegetables, like all squashes, tomatoes, eggplant etc. Good cooking.

6 small zucchini
16 oz. hot vegetable broth
2 tbl margarine
2 tbl flour
1/2 - 1 cup grated cheddar cheese (optional)
Salt & pepper
In a sauce pan melt margarine over medium-low to medium heat. When margarine foams, add flour and mix very well.
Add a small amount of broth and whisk until no lumps remain and fully incorporated.
Continue whisking and adding broth until all broth is incorporated.
Cook over medium heat until sauce thickens. Add salt & pepper.
If using cheese add to the sauce now.
Remove from heat.
Clean zucchini and cut into 3/4 - 1 inch pieces
Place in a pan of boiling water for about 2-3 minutes.
Remove from pan and if not baking right away, place into ice water.
Place zucchini into a greased baking dish and pour sauce over the top. (You may not need all the sauce.)
Bake in a 350 oven for about 35 minutes or until tender and sauce has thickened.

Canned soup can be used in place of this sauce.

I like it just peeled and sliced and fried in butter and whatever seasonings you like.

BAKED ZUCCHINI

3 c. fresh bread crumbs
1 can (16 oz.) diced tomatoes
1/2 c. chopped onions
1 green pepper, chopped
1 c. sliced mushrooms
1/2 tsp. salt
1/2 tsp. lemon pepper
4 med. zucchini (unpeeled, sliced thin)

Put 2 1/2 cups bread crumbs plus remaining ingredients in large bowl and mix together. Put in large 3 quart casserole or baking dish 9 x 9 inches, pat down and cover with last 1/2 cup of bread crumbs. Bake at 400 degrees for 45 minutes. Top with shredded cheese and leave in oven until melted.

#1)Toss zucchini in some italian dressing before baking

#2) Slice a yellow onion into wedges and bake with the zucchini

#3) Spray the slices with a little no-stick spray and sprinkle with cajun or blacking season...mmmm mmm!

#4) Lemon or Orange Zest & Fresh ground black pepper half way through cooking time

I would use olive oil and salt and pepper and crushed red pepper flakes to season it.

some simple fried zucchini.... just cover with bread crumbs and fry and serve with a side of ranch dressing for dipping! :)

ITALIAN -STYLE BAKED ZUCCHINI

4 small zucchini, peeled and sliced OR 1 large eggplant
3 eggs
Milk
Flour (about 1cup)
Salt and Pepper
1 jar Spaghetti sauce (or 26-28 oz.home made sauce)
Grated Parmesan Cheese

Peel and slice zucchini or eggplant. (If using eggplant, soak in salted water for 5 minutes and then drain on a paper towel.) Mix eggs in a small bowl with a little milk. Set aside. Season flour with salt and pepper and mix well. Heat oil in a large skillet on medium-high heat. Dip sliced zucchini or eggplant into egg bath, dredge in flour and fry a little at a time until golden brown. (Do not crowd pan.) Place fried slices on a paper towel to absorb excess oil. Using a 2 quart casserole, spoon enough sauce just to cover the bottom of the casserole. Layer slices of zucchini (eggplant), then sauce, then sprinkle grated cheese. Repeat until vegetables are all used or casserole dish is filled. Top with lots of grated cheese. Bake in a 350 F. oven for 30 minutes. Good in sandwiches the next day, hot or cold.

Just slice, place on a baking sheet or in a baking pan. Dribble some extra virgin olive oil, and sprinkle on lemon pepper, rosemary, or thyme.
Bake until it is just fork tender. Warm a little tomato sauce to serve over.

zucchini bread


2 cups flour
2 tsp baking soda
1 tsp salt
1-4 tsp baking power
3 tsp cinnamon
3 eggs
1 cup vegetable oil
1 1-2 cups sugar
2 cups zucchini
2 tsp vanilla

sift first 5 ingredients together.
combine the eggs,oil,sugar,zucchini and vanilla
stir egg mixture into flour mixture. bake at 350 for 40 to 60 minutes. use loaf pans.
