Any ideas for herbs I can subsitute when a recipe calls for tarragon?
Answers: I can't stand the smell or taste of tarragon. Something about it makes me almost physically ill.

It depends what you are making if it is a sauce then basil if it is a casserole or something that will cook for a long time then thyme.
While you are cooking place your face in the steam of the dish and take a nice deep breath then smell the herb you wish to add. You will soon know if it is the right one.

you never really have to put in any herb you dont want in a recipe, you should really just find something else you like instead....i would use thyme probably
personally would use a tsp of dried marjoram, thyme or oregano,
you can substitute chervil or a dash of fennel seed or anise seed in a pinch, but the flavor will not be as intended.
? 1/2 ounce fresh tarragon = 1/3 cup.
? 1 Tbsp fresh tarragon = 1 tsp dried.
You can try any of the following:
Rosemary, Thyme, Rosemary, Chervil, Funnel Seed, Anise Seed.
