Chicken Pizza

INGREDIENTS

* 2 skinless, boneless chicken breast halves
* 1 (10 ounce) can refrigerated pizza crust
* 1/2 cup Ranch-style salad dressing
* 1 cup shredded mozzarella cheese
* 1 cup shredded Cheddar cheese
* 1 cup chopped tomatoes
* 1/4 cup chopped green onions


DIRECTIONS

1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.
2. Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.
3. Unroll dough, and press into the prepared pizza pan or baking sheet. Bake crust for 7 minutes in the preheated oven, or until it begins to turn golden brown. Remove from oven.
4. Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.


KFC Crispy Chicken Recipe

1 whole frying chicken, cut up and marinated
6-8 cups shortening (for cooking)
1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon msg
1/8 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon baking powder


1. Trim any excess skin and fat from the chicken pieces.
2. Preheat the shortening in a deep-fryer to 350 degrees.
3. Combine the beaten egg and milk in a medium bowl.
4. In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper and MSG).
5. When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off.
6. Working with one piece at a time, first dip in egg and milk then coat the chicken with the dry flour mixture, then the egg and milk mixture again, and then back into the flour.
7. Be sure that each piece is coated very generously.
8. Stack the chicken on a plate or cookie sheet until each piece has been coated.
9. Drop the chicken, one piece at a time into the hot shortening.
10. Fry half of the chicken at a time (4 pieces) for 12-15 minutes, or until it is golden brown.
11. You should be sure to stir the chicken around halfway through the cooking time so that each piece cooks evenly.
12. Remove the chicken to a rack or towels to drain for about 5 minutes before eating.

For chicken pizza, this recipe is delicious! You can use the pillsbury pizza dough in a tube or any pre-made pizza crust available at the store. This is delicious with ranch dressing drizzled on the top after it is baked.

1 (13.8-oz.) can Pillsbury? Refrigerated Pizza Crust
1 (9-oz.) pkg. Green Giant? Frozen Spinach
1 tablespoon oil
1/2 cup coarsely chopped onion
1 (6-oz.) pkg. refrigerated cooked Italian-style chicken breast strips, chopped
8 oz. (2 cups) shredded mozzarella cheese
1 (2.8 to 3-oz.) pkg. precooked bacon slices, cut into 1/2-inch pieces

1. Heat oven to 400°F. Grease or spray 15x10x1-inch pan. Unroll dough; place in greased pan. Starting at center, press out dough to edge of pan.

2. Meanwhile, cook spinach as directed on package. Drain well; squeeze to remove liquid. Heat oil in small skillet over medium-high heat until hot. Add onion; cook and stir 3 to 4 minutes or until tender, stirring frequently.

3. Top dough with spinach, onion, chicken, cheese and bacon.

Southern Fried Chicken

3 eggs
1/3 cup water
About 1 cup hot red pepper sauce (recommended: Texas Pete)
2 cups self-rising flour
1 teaspoon pepper
House seasoning, recipe follows
1 (1 to 2 1/2-pound) chicken, cut into pieces
Oil, for frying, preferably peanut oil

In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the house seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.

Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

BBQ chicken pizza..
boneless chicken breast halves, cooked and cubed
1 cup hickory flavored barbeque sauce
1 tablespoon honey
1 teaspoon molasses
1/3 cup brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) pre-baked pizza crust
1 cup smoked Gouda cheese, shredded(any cheese will do)
1 cup thinly sliced red onion




DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.
Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.

Enough oil or lard to fill skillet to a depth of about 1/2" - lard, lard and butter combined or vegetable: Crisco shortening

Large heavy skillet or casserole with cover; large mixing bowl; tongs or a big fork for handling chicken pieces, frying thermometer (ideally).

IN a bowl, mix chicken with salt, pepper, spices, garlic, chili, egg and 2 tablespoons water. When thoroughly combined, blend in flour, using your hands. Keep mixing until most of the flour is blended with other ingredients and chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery and not too wet - it has to adhere to the chicken).

ADD enough fat (oil) to your skillet to come to a depth of about 1/2 inch and turn heat to medium. If you are using butter, skim any foam as it rises to the surface.

WHEN oil is hot ) raise heat to high. Slowly add chicken pieces to skillet. Cover skillet, reduce heat to medium (more or less - oil should sizzle but not smoke) and cook for 7 minutes.

UNCOVER skillet, turn chicken and continue to cook, uncovered, for another 7 minutes.

TURN chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.

#1--How I make a pizza.

At your supermarket, you can buy round, pre-made, partially cooked pizza dough, or pizza crust. Get a jar (or can) of ready-made spaghetti sauce (or meat sauce), about 1 pound (or more) of shredded mozzarella cheese, and a whole piece of fully cooked grilled chicken, or deep-fried chicken, or frozen ready-2-eat chicken. Fillet and debone the chicken, so you have strips of chicken meat fillet. Laying out your ready-made pizza crust (or pizza dough) on a pizza tin, spread an even layer of spaghetti sauce (or meat sauce) over the pizza crust (dough), about 1/8 inches thick, and leave a 1-inch border around the perimeter of the dough (crust) free of any sauce. Next, spread a layer of shredded mozzarella cheese where you had layed out the spaghetti sauce, about 3/4 to 1 inch thick. Next, lay out a layer of your chicken fillet strips across the entire pizza. While you were doing all this, the oven should had been pre-heating to 350 degrees fahrenheit. Bake your pizza in oven for 15 minutes, or until the mozzarella turns light brown; the same color as how you see it at pizza places. Use a pizza cutter knife to properly cut your pizza. Goes great with beer or Coca Cola.

bag and shake chicken pieces in it. Melt butter and

i don't like pizza, so i can't help you there. i can help you with the chicken, tho.

buy a whole chicken and have the butcher cut it for frying. if you buy pre-cut chicken, be sure you get chicken that is on the bone (not boneless) and with skin (not skinless)

put the chicken in a bowl and pour a bottle of Red Hot (a hot sauce - yes a whole bottle) on the chicken. let is sit while you mix your dredge (the mix you will coat the chicken in to make it crispy)

to make your dredge: one cup of all purpose flour, 1/2 cup of cornstarch, salt, pepper, garlic powder, and any other spices you like to taste. mix it all together.

take a piece of chicken out of the bowl and shake off any access Red Hot. roll the piece of chicken around in the flour mixture until it is all covered.

once all your chicken pieces are coated, put them into your hot oil. i always use a deep fryer with peanut oil - you can pan fry or deep fry either is fine. peanut oil gives a wonderful flavor and can take more heat.

if deep frying, cook the chicken for 12 minutes, then place on a cookie sheet and into a warm oven until ready to serve.
