Can you give me your best meatloaf recipie?!
* For more flavor and a juicier meatloaf, add about 1/4 cup of tomato juice, wine, or broth for each pound of meat.

Cheddar-Spinach Meatloaf
INGREDIENTS:
* 1 pound extra-lean ground beef
* 1/2 to 1 pound ground veal
* 1 cup finely chopped onion
* 1 cup soft bread crumbs
* 1 large egg, lightly beaten
* 1/2 teaspoon salt
* 1/4 teaspooon black pepper
* 1/2 teaspoon Cajun seasoning
* 1/4 cup beef broth or milk
* 10 ounces frozen spinach, thawed and squeezed dry
* salt and pepper
* 1 1/2 cups shredded sharp Cheddar cheese
* stewed tomatoes, diced tomatoes, or ketchup, optional
PREPARATION:
Mix beef, veal, onion, bread crumbs, egg, 1/2 teaspoon salt, the 1/4 teaspoon black pepper, and Cajun seasoning. Add beef broth or milk and mix until blended. On a piece of foil about 18 inches long, pat out the meat mixture into a rectangle about 1- by 14 inches.Sprinkle spinach over the meat layer, sprinkle with salt and pepper, then sprinkle the cheese over all. Using the end of the foil to help, roll the meatloaf up (do not roll the foil into the meatloaf. Leaving the length of foil around the loaf, place it on a plate and refrigerate to chill. Remove from the foil and place in a lightly greased 9x13-inch baking pan.
Heat oven to 350°.
Bake for 1 1/2 hours, or until done. If desired, top with stewed or diced tomatoes or spread a little ketchup over the top.

Meatloaf is one of my favorite meals - served with mashed potatoes and whole green beans or steamed baby carrots.
Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.
2 pounds of 80/;20 ground beef
2 eggs
1/2 cup Italian seasoned bread crumbs or more if the mixture still looks wet
Pinch of salt and pepper
1/2 cup grated cheese
tsp.minced garlic
Mix all ingredient together.Shape into a loaf.Place on broiler pan to drain fat and keep bottom from getting soggy.Bake at 350 for about an hour.
This is a basic meatloaf recipe.You can also roll this mixture between two pieces of foil,and stuff with cheese.Also if you saute some spinach in garlic and olive oil you can add this to the center and mozzarella.Roll up make sure all edges ae sealed and bake for same time.Enjoy!!You can`t go wrong with meatloaf.Try different seasonings.I`ve even made a Mexican one with salsa,I`ve added cooked rice also.
