What can I cook with red potatoes?!

boil them up in some salted water until they are soft. Then, cut them in wedges, drizzle some olive oil over them, season them how you like them, and bake them in a single layer in your oven until they become browned.

you could turn them into mashed potatoes, or bake them with herbs.
I usually cut them into quarters, put them in a pot with about an inch of water, sprinkle some rosemary on top, cover and boil until fork tender. Then, drain water and add lots of butter!! Good luck!

Cube them with the skins on. Mix up half/half dijon mustard and olive oil into emulsion and fully coat the potatoes. Bake on single layer at 350 for 35 - 45 minutes.
Make smashed potatoes. Boil them with the skin(peel) on when they are fork tender, mash them with some butter, heavy cream and Parmesan cheese(about a 1/4 of a cup) and some salt&pepper .
My mom makes a nice simple dish by peeling the skin from around the middle (it's pretty and I suspect it speeds the cooking time), the puts them in a pot with a steamer with about 1" of water. Once they're fork tender, we tossed them with butter, salt, pepper, and herbs (liked dried parsley, or Rosemary, or whatever your preference). Simple and yummy! Steaming them takes some time (30-40 minutes?) but it's worth it. The leftovers keep well, too. I liked Beau's potato salad idea, too. That sounds tasty!
