I am looking for a simple eggplant stir fry dish, one or two ingredients, any ideas?!

The japanese have the best eggplant dish I've ever tasted- its called Nasu Miso. Basically its just Fried big cubes of eggplant, with miso smeared on top. They add mirin and a touch of soy to the miso- and usually there's two different colours- one light and one dark miso. Its seriously good, and vegetarian!

I like to dice eggplant, squash, zucchini, and onions together. Sometimes I even add sliced green chilies. Then add on top of the rice.

You could add some peppers, give it some colour and CRUNCH! =] and you could add some chicken or something. x

I'd use just mushrooms, & thin strips of beef or chicken.
Maybe some vegetables: snow peas, water chestnuts, etc.

Core the eggplant, you must at least have a kilo of it.Prepare a cup of rice(washed thoroughly & drained)and mixed with 1big sliced into cubes onions,3 sliced into cubes tomatoes,small bunch of celery,basil leaves,salt to taste,black pepper,5 big spoonful of sunflower oil.Fill in the mixture to each and every cored eggplant making sure that the eggplant is filled until the end.arrange them in a row in a deep pan then covered with any broth or plain water.Boil for 20 minutes then lower the flame until you'll fine the rice cooked.Bon Appetit!!!!!!!!! The broth must be until the first line of your middle finger.
