Does anybody have a good and easy recipe for broccoli cheese soup?!


Question: Broccoli Cheese Soup

1 cup fresh or frozen broccoli, chopped small
? cup onion, finely chopped
3 tablespoons butter
Kosher salt and fresh black pepper
3 tablespoons flour
2 cups chicken stock
? cup heavy cream
? cup shredded Velveeta
? cup shredded cheddar cheese

In a heavy saucepan sauté onion in butter until tender. Whisk in flour, salt and pepper until smooth and simmer for one minute. Gradually stir in broth until mixture boils and thickens. Stir in cream, broccoli and cheese and simmer to desired thickness.

Easiest:

Get a can of Campbell's cheese soup and prepare it according to directions. Get a small bag of frozen broccoli and add as much as you think you'd like to the soup. Cook on med-low heat until broccoli is tender. Enjoy!

But WAIT!
If you want to season the soup more, add either a couple teaspoons of diced onion or half a teaspoon of onion powder, some ground pepper, maybe a bit of chipotle powder (a teeny tiny smidge of a pinch -- this stuff is hot, but it gives a spicy/smokey flavor to anything you add it to).

I happen to like carrots and celery in my broccoli soup, so you could dice or slice some carrots and celery and add as much as you'd like. Cook until all veggies are tender. Shredded carrot would cook fastest.

Top it all off by adding 1/4 cup of your favorite beer.

Oh, Boy!

I can give you a more complex version, but this is probably the easiest recipe I can come up with... Good luck!

Fast and easy with a little twist with rice



INGREDIENTS
2 cups Minute? White or Brown Rice
1 (10 ounce) package frozen chopped broccoli, thawed
1 (10.75 ounce) can reduced fat cream of mushroom soup
3 cups 2% milk
1 pound 2% processed cheese, cubed


DIRECTIONS
Prepare rice according to package directions.
In a medium saucepan, combine broccoli, soup and milk. Bring to a simmer over medium heat. Add cheese and stir until melted. Remove from heat and stir in rice.
