Answers: what could i have with cheesy hash browns beside hash browns ?
I make what could be considered a cheese-hash-brown casserole at holidays, and I always serve ham with it. Yummmmm...

Bacon and eggs.
You can serve just about anything since it is not just a breakfast dish. You could have baked pork chops or chicken with a veggie, just about anyting you choose that sounds good to you.
if for Breakfast...... an egg casserole is great, pancakes and bacon....
if for Brunch....... finger sandwiches, fruit, quiche
if for Dinner/Supper...... Pork, steaks, chicken breasts, veggies, fruit...

I think cheese hash browns goes with most meat. It's great with pork chops, or fried chicken. Good with breakfast of course. It's a starch so anytime you want a substitute for mashed potatoes, go for it. I think they would be great with B-B-Q.

Authentic Huevos Rancheros
This is an easy to make tostada-type breakfast that will definitely satisfy your hunger until lunch.

INGREDIENTS
2 tablespoons vegetable oil
4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Cheddar cheese
8 slices bacon, cooked and crumbled
1/2 cup salsa (optional)
DIRECTIONS
Heat oil in a small skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain grease.
Meanwhile, combine the refried beans and butter in a microwave-safe dish. Cover, and cook in the microwave until heated through. When tortillas are done, fry eggs over easy in the skillet. Add more oil if the tortillas have absorbed it all.
Place tortillas onto plates, and spread a layer of beans on them. Top with cheese, a fried egg, crumbled bacon and if desired, salsa.
try a salad of capsicum (bell peppers) cos lettuce, green onions, cucumber cubes, champignion slices (optional) and crumbled cooked bacon chips with a french or italian dressing just for something lighter to go with the fat content of the hash browns. You need to eat from all food groups so I would avoid more fat and all a crisp salad for a delicious contrast. You may like a little sour cream with snipped chives to serve as a garnish with the hash browns however. If you like nuts, you can toss in a handful of walnuts or pecans into your salad too. I am thinking for texture and nutrition in your meal.

You could serve with it a runny fried egg and a sauasge with a few bacon rashes it would go great with some hp sauce too if you need any other sugestions just ask me.
