Answers: My wife and I just bought a Panini Maker, and we want to make... The Greatest Panini EVER. Has anyone else ever made a Panini that just knocked their socks off? Please tell me about your recipes!

An electric sandwich press is one of those things my husband and I thought was probably a silly, gadget-y thing to buy, but now that we have it, we use it at least a couple of times a week. We have a few tried and true panino (singular is panino) recipes that we use a lot, and here they are:
--Roast beef, Havarti, and very-thinly-sliced red onion
--Prosciutto with drained water-packed (or regular, thinly-sliced) mozzarella, a couple of basil leaves tucked in if you've got some, and a dusting of grated Parmesan
--Thin slices of tomato between a layer of farmhouse Cheddar and one of a good-quality Monterey Jack--sometimes we add a spinach leaf or two
--Good-quality sliced deli ham and Swiss Gruyere for a croque-monsieur
--Sauteed eggplant slices, fresh mozzarella, basil leaves (or sometimes we use pesto) and roasted red pepper strips (from a jar, drained on paper towels)

OMG!!! I just made them tonight.
Sliced Italian bread, I mix Crean cheese and chopped Black and Green olives. Spread the mixture on the bread. Add sliced Honey ham... Sliced Olives,Honey Mustard and swiss cheese! OMGGGG It was to die for
I love paninis! The panini maker is a fun type of grill. The best panini I have ever had is just a simple one. It has provolone cheese, grilled chicken, asparagus, and raspberry chipotle sauce. Whenever we make paninis they're not that fancy. If you cut up pieces of bread and put olive oil and kosher salt on them and put them in the grill. They are just like fancy pieces of toast but very yummy!
To be honest, i've been from here to timbucktoo as far as pannini is concerned. The absolute best is getting a fresh crusty roll, a bit of butter, then, some FANTASTIC cheese of the highest quality- like provolone, or gouda - something along those lines. Spray oil on the outside of the roll after filling it with the cheese, and squish the panini maker down until the roll is literally no more than 1 cm high. Leave that to toast up, then slice in half. Its the simplest but you'll come back to it every time!!
