Question: I wanted to make something yummy for my boyfriend this weekend...he is a fan of pasta dishes and a meat and potatoes kind of guy as well-o and mexican....basically anything. Please let me know some of your fav (not to hard to make) recipes!!

We love this easy Taco Salad...Brown/drain 1/2-1lb ground beef, add a pinch of cumin, chili pepper, garlic powder, salt/pepper, and a tiny bit of water....saute' with diced onions and green bell peppers...when onions are clear, add 2-4 oz cubed Velveeta, and melt into beef mixture. Pour over Romaine or Iceberg lettuce and layer mixture with Fritos, lettuce, beef. Top with salsa, sour creme, diced tomatoes, and olives...Yum.

*********CHICKEN CACCIATORE WITH NOODLES
1/4 c. oil
1 - 3 lb. chicken, cut up/boneless chicken breast
2 pt. jars Spaghetti sauce
1 tsp. pepper
1 clove minced garlic
12 oz. pkg. noodles
Parmesan cheese
Grated cheese
Heat oil in skillet. Brown chicken on all sides. Combine salt, pepper, sauce and garlic; pour over chicken. Simmer covered 25 minutes or until tender. About 10 minutes before chicken is done, cook noodles according to package. Drain. Arrange chicken on noodles. Sprinkle cheese over all. Serves 4 to 6. Serve with salad and Garlic Bread.

My favorite way to cook past is with grilled shrimp, roasted vegetables and a spicy arrabiatta tomato sauce. It's a recipe I made up and it never fails to make a good impression (I'm yet to find someone that doesn't like it).

For the veg-
I use sections of red onion, eggplant (cubed) cherry tomatoes, zucchini and those little mini bell peppers. Dirzzle a little olive oil on a baking sheet or spray lightly with PAM. Place the veg on the baking tray. Drizzle with extra virgin olive oil. Sprinkle with a little rock salt and some fresh cracked black pepper. You can also sprinkle on some dried chili flakes if you like it spicy. Roast them in the oven at about 375 f. They usually take around 45 mins to an hour to cook.

For the sauce, saute a clove of minced garlic with a little olive oil but don't let it burn. Add a can of plain tomato sauce or chopped tinned tomatoes to the pan. Add some basil and orgeano to taste (usually twice as much basil as oregano), some chili flakes or tobasco. As much as you like depending on how hot you like it and season with salt and pepper.

Get raw tiger prawns, defrosted and shelled. Grill them til theyre cooked through. But, don't overcook them as they'll get chewy. I usually use a george forman grill to do this.

Put shrimp and vegetables on a bed of cooked wholewheat spaghetti and finish by pouring over the sauce. Add some grated parmesan or romano cheese and you're good to go.

I like to serve it with a side salad or garlic bread and a big glass of Chardonnay.

I have an awesome recipe for meat-n-potatoes...my boyfriend and I created it one night and it is awesome...it seems simple, but it is very good and we now make it once a week...we didn't have milk and that's how we created this recipe...

Ingredients:
One pound of hamburger (cooked & drained)
One box of scallop potatoes (like Betty Crocker, etc.)
One can cream of potato soup
One can corn
One can peas

Like I said, cook and drain the beef

Then in a baking dish, start making the potato mix like the box says, but do NOT add milk.

Instead of adding milk, add the can of cream of potato soup.

Mix all that up really well and then stir in the beef and the 2 cans of vegetables...cover the baking dish with lid or foil...

Use the scallop potato box for the time and temp to bake in the oven...might need 5-10 minutes longer...mix 2 or 3 times while baking...

Trust me it is super easy and its absolutely delicious...a man pleaser for sure...

How about tacos? Not like from taco bell!
I make these steak tacos and they are fabulous. I love to make them when it is warm enough to grill, but they are excellent made inside too.

1 big strip steak
1/2 med yellow onion or 1 small
1/2 pepper of your choosing
handful of cilantro
2 cloves (not heads, cloves) of garlic
maybe some taco spices if you are into it, like: cumin, red pepper flake, paprika, garlic powder
1 lime
salt and pepper
and of course, Tortillas and taco fixin's of your choosing. I like shredded lettuce, diced tomatoes, shredded cheese and sour cream. But whatever you guys like is great. There is virtually no way to mess up this recipe.

Preheat your broiler ( or if you have a grill pan or just a regular grill that will work too)
Rub the steak with the salt and pepper and whatever other taco seasonings you have on hand.
Put it in the broiler until it is a little rarer than your liking. Flip it over half way through to brown both sides evenly.
Let the steak rest for 10 mins or so before thinly slicing.
While the steak is cooking and resting: Slice the pepper up very finely and slice the onions up very thinly and sautee them in a skillet with a little olive oil A. Season them with salt and pepper. When they begin to soften add the chopped garlic to the pan and remove the pan from the heat.
As the steak finishes, chop the cilantro, zest the lime and slice it in half.
After you have sliced the steak turn the heat up to high under the onion skillet add the beef and any juice that may have escaped, toss in the cilantro and the zest and the juice from 1/2 of the lime (don't go crazy with the lime juice... this is the one part that I guess can go wrong... a little goes a LONG way). Stir it all around the pan to incorporate and then remove from the heat.
Yum. Make tacos! I like the soft corn tortillas but you can use this in crunchy shells or soft flour tortillas. You can combine this mixture with rice or beans and make a burrito.

BTW, any ingredient that you don't enjoy (peppers, onions) can be omitted. And I don't always use bell peppers, sometimes I use a poblano or an Anaheim to get a little more heat. Of course if you and your BF like spicy foods you could use jalepeno or even habenero. Whatever you like works.
This recipe makes plenty for 2. If you are serving more people just add another steak and increase other ingedients as well.

for a pasta dish thats quite simple and so delicious you could try my favorite. its called chicken alfredo with fettuccini noodles heres the recipe, its for 4 servings, you can always cut that in half for just 2 servings.
1/2 lb. fettuccini noodles
3/4 cup butter, divided
1/2 lb. chicken breast, boneless, skinless, cut into cubes
15 oz. whole milk ricotta cheese
1 cup heavy cream
1/2 tsp. salt
1/2 cup parmesan cheese
cook the noodles according to the package and drain, do not rinse. melt 2 Tablespoons butter in large skillet, saute chicken until no longer pink and juices run clear. in sauce pan combine cheeses, cream, salt and remaining butter. cook over medium heat for about 10 minutes. stir in noodles and chicken, cook until heated through. serve with garlic bread. you can also season the chicken with garlic salt and parsley as its cooking for a more italian flavoring.
you can also do steak and baked potatoes and corn
or you can do some beef enchiladas with refried beans and mexican rice. here is a link for some fantastic recipes.
