im a really big fan of tomato soup and emeril lagasse and i actually tried this recipe my mom made it:

2 pounds Italian sausage, removed from casings and crumbled
2 cups finely chopped red onions

Cook the bacon in a medium pot over medium heat for about 2 minutes. Add the sausage and cook with the bacon until browned, about 5 minutes more. Add the onions and Essence and cook, stirring often, until the onions are softened, about 5 minutes.
Add the crushed red pepper and garlic and cook until fragrant, about 30 seconds. Add the bay leaves, tomatoes, and chicken stock and stir to combine. Bring to a boil, reduce the heat, and simmer for about 30 minutes. Season, to taste, with salt and black pepper. Stir in the cilantro, ladle into warm soup bowls, and serve with crusty bread.
Campbell's tomato soup and grilled cheese sandwiches
Well you put some water in a pot and you open the can, and poor it in! I'm really bad with making from scratch, so I try NOT to
1 (14-ounce) can chopped tomatoes
3/4 cup extra virgin olive oil
Salt and freshly ground black pepper
1 stalk celery, diced
1 small carrot, diced
1 yellow onion, diced
2 cloves garlic, minced
1 cup chicken broth
1 bay leaf
2 tablespoons butter
1/4 cup chopped fresh basil leaves
1/2 cup heavy cream, optional
Preheat oven to 450 degrees F.
Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.
Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream, if using. Puree with a hand held immersion blender until smooth.

Coriander Tomato Soup
2 bunches fresh coriander
1 Tbs. olive oil
1 onion, chopped
2 cloves garlic, minced
2 tsp. cumin, ground
1 & 1/2 Tbs. paprika, ground
1 large can tomatoes
1 qt. water
4 Tbs. tomato paste
cayenne pepper to taste
salt and pepper
juice of 1 lime (or more)
Directions:
The secret is the coriander (also commonly called cilantro). Use a lot of it!
Tie the bunches of coriander leaves together with a string so that you can remove them later.
(Make sure they are nice and clean)
Heat the olive oil and saute the onion.
Add garlic, cumin, paprika and saute.
Add the tomatoes, the tomato paste and the water.
Season with salt and pepper and add the coriander bunches.
Simmer, covered for about 30 minutes.
Remove the coriander and puree with a blender or food processor.
If you really enjoy the taste of coriander or cilantro, then cut some of the leaves of one bunch into the soup and puree to incorporate into the soup.
Return and stir in the cayenne and lime juice.
When it is warm it is ready to serve.
