Ingredients:
1 cup water
3 oz butter
1 tbsp sugar
1/8 tsp salt
1 cup flour
4 lg eggs
2 lg egg whites
Directions:
Boil water, butter, sugar, and salt.
Add flour and work until all it is incorporated and dough forms a ball.
Transfer mixture into bowl of a standing mixer and let cool for 3 to 4 minutes.
With mixer on stir or lowest speed add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing.
Once all eggs have been added and mixture is smooth put dough into a piping bag fitted with a number 12 tip.
Heat about 1 1/2 inches of oil in a pan.
Pipe dough into oil, making a free-form lattice pattern and cook until brown flipping once.
Remove cake from oil, drain on paper towels, top with powdered sugar or cinnamon and continue until all of the batter is used.

Dutch Funnel Cake
2 eggs
1 1/3 cups milk
2 2/3 cups flour
1/4 cup sugar
1/4 teaspoon salt
2 teaspoons baking powder
powdered sugar
oil (for frying)
--Beat eggs, add milk and beat again. Sift dry ingredients into a large bowl. Add egg mixture and beat until smooth. Heat oil to 400 degrees. Pour 1/2 cup of batter into a funnel. Let batter drizzle into hot oil starting at the center and expanding in a circular motion, criss-crossing with the last bit of batter. Brown on both sides. Drain on paper towels. sprinkle with powdered sugar, fruit syrup, chocolate, or whatever you prefer!

I find that any recipe for pancakes works as funnel cake. The secret is in the heat of the oil. Do not cook too much at one time or the oil will get cold and the funnel cakes will be soggy.

INGREDIENTS
3 eggs
2 cups milk
1/4 cup white sugar
3 2/3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder


DIRECTIONS
In a medium bowl, mix salt, baking powder, and half of the flour. Set aside.
In a large bowl, cream eggs, sugar and milk. Add flour mixture and beat until smooth. Continue to add remaining flour, but use only enough to achieve desired consistency. Batter will be thin enough to run through a funnel.
In an eight inch skillet, heat the oil to 375 degrees F (190 degrees C).
Put your finger over the bottom opening of the funnel, and fill the funnel with a generous 1/2 cup of the batter. Hold the funnel close to the surface of the oil, and release the batter into the oil while making a circular motion. Fry until golden brown. Use tongs and wide spatula to turn the cake over carefully. Fry the second side one minute. Drain on paper towels, and sprinkle with sifted confectioners' sugar or cinnamon sugar.

AMISH FUNNEL CAKES

3 eggs, beaten
2 c. milk
1/4 c. sugar
4 c. flour, sifted
2 tsp. baking powder
1/2 tsp. salt

To beaten eggs, add milk and sugar. In separate bowl sift dry ingredients. Add to egg mixture, beating until smooth. Heat oil to 375 degrees and pour batter into hot fat through a regular household funnel. Control the flow of batter by holding your finger over the bottom of the funnel.
Make patterns, designs, swirls or whatever with the stream of batter as it flows into the hot fat. When "cakes" are golden brown, drain, sprinkle with confectioners' sugar and serve warm.
