Mojo Salsa
Ingredients:
1/3 cup each finely chopped green, red and yellow bell peppers
1/3 cup chopped red onion
2 Tbsp. butter
1 (8 oz) can black beans, drained
8 oz. frozen corn kernels
1/4 cup frozen tangerine juice concentrate
1 large jalapeno, seeded, finely minced
2 Tbsp. fresh lime juice
1 Tbsp. chopped fresh cilantro
1 tsp. red pepper flakes
1/4 tsp. salt
1/4 tsp. coarse ground black pepper
2 medium bananas, chopped
1 8 oz. can juice-pack pineapple chunks
Preparation:
Saute bell peppers and onion in butter until onion is tender. Stir in black beans, corn, tangerine juice concentrate, jalapeno, lime juice, cilantro, red pepper flakes, salt and black pepper. Bring to a simmer. Stir in bananas and pineapple. Remove from heat.

I have taken store bought salsa and added rasberry preserves. It may not sound good but it taste wonderful. We have a festival where I live and they always have stands of different types of salsa. Most of them you can match the taste by adding jelly preserves of any flavor.... Good Luck!!!!!

Add chopped pineapple (fresh or canned) to any salsa. Or use ripe mango, ripe peaches (fresh or canned).

pineapple salsa
2 cans pineapple drained & choped
1 red bell pepper diced
1 red-purpal onion diced
1 lime -juce only
1to 1 1/2 TB hunny-or to your taste
1 1/2 ts celontro choped
jalopeno peppers to taste-seeded choped i use 1 1/2
4 green onions - choped
mix well let sit in frig for 1/2 hr.
its great on chicken breast allso
