Healthy tips and Ideas on making baked chicken taste close to fried chicken or better?!

Flour the chicken and spread some butter on it. Its better than oil fried.

Seasonings! Rub whatever seasoning you use on your fried chicken onto the bird and bake. At the end, brush outside with mixture of olive oil and more seasoning and broil on high till skin (or meat if you've removed the skin) is browned and crunchy.

Ingredients:

1 4 or 5 lb chicken
1/2 small head napa cabbage, chopped rough in 1 inch pieces
1 onion cut into 1 inch pieces
1 stalk celery, cut into 1 inch pieces
6 or 7 small carrots, whole
1 head of garlic with top sliced off to reveal tops of cloves
1 Tbs olive oil
1 Tbs mixed dry herbs (a combination of rosemary/oregano/basil)
1/2 stck unsalted butter melted with 1 tsp fresh thyme leaves.

fresh cracked black pepper

Preheat oven to 400 degrees.

Remove giblet pkg from chicken.
Rinse chicken inside and out. Pat dry.
Place chicken breast side down on cutting board.
Using poultry or kitchen shears, start cutting just to the right of the backbone (neck toward tail).
Repeat on the left side of the backbone. Discard backbone or save for a chicken stock.
Turn chicken over (breast side up) and push down to flatten chicken.
Generously season both sides with salt and pepper.

Add oil to large oven proof skillet.
Place head of garlic in center of pan and stack cabbage on top. Surround with onion, celery, and carrots.
Sprinkle on mixed dry herbs with a little salt and pepper.

Place chicken (breast side up) on top of vegetables and place uncovered in 400 degree oven.

After 20 minutes, reduce heat to 350 degrees.
Paint breast side of chicken with some of the melted butter mixture. Repeat every 20 minutes.

Total roasting time should be about 20 minutes per pound. (5 lb chicken,100 minutes/or 1 hour 40 minutes)
a thermometer inserted in the thickest part of chicken (thigh), should register 180 degrees.

Remove chicken from pan and let rest on cutting board for at least 15 minutes.

While chicken rests, remove garlic head from pan. When it's cool enough to handle, squeeze, to pop out perfectly roasted garlic cloves.

Spoon off excess fat or oil on juice in pan.

Carve chicken and serve over roasted vegetables, garlic cloves, and pan juices.

Well I like to poke holes in the chicken breast (assuming that's what your using) pour a small amount of olive oil on top and bottom making sure its entirely coated with the olive oil. Then I sprinkle seasoned bread crumbs on both sides and also sprinkle seasonings of my choice. Depending on what flavor I'm in the mood for that day...but my favorites are lemon pepper...cajuin...chicken rub..etc.
