Question: I never really heard of it until a few days ago. Something involving chicken, and northern beans? Whats the base made of? Is it spicy? what do you even use for the spices?!

Yes, chicken broth, yes, and yes......in order. Here's my favorite:

White Chicken Chili:

2 cups diced onions
2 cups diced celery
5 garlic cloves, chopped
1/2 cup vegetable oil
1 pound chicken breast, cooked and diced
8 cups water
1 bay leaf
1 (7-ounce) can chopped green chilies
1/2 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon dry mustard
1/2 teaspoon basil
1/2 teaspoon Old Bay seasoning
1/4 teaspoon Cajun seasoning
1/3 of a 7-ounce can chipotle in adobo, chopped
4 tablespoons chicken base
1 pickled jalapeno, chopped
2 pounds white beans, soaked overnight
1/2 cup heavy cream
1 cup shredded carrots
16 ounces sour cream

Saute onion, celery, and garlic in oil until tender, about 5 minutes. In a large stockpot add chicken, water, bay leaf, chiles, oregano, cumin, dry mustard, basil, Old Bay, Cajun seasoning, chipotle, chicken base, and pickled jalapeno and simmer for 1 1/2 hours. Add the drained beans and heavy cream and simmer for 1 hour, or until the beans are tender. Garnish soup with carrots and sour cream.


Here's a vegetarian version:


6 cups reduced-sodium vegetable or chicken broth
1 (15-ounce) can black beans, rinsed and drained
3 (15-ounce) can white (cannellini) beans, rinsed and drained
1 cup frozen baby lima beans or regular lima beans
1 cup chopped onion
1 green bell pepper, seeded and chopped
2 cloves garlic, minced
1 tablespoon minced pickled jalapeno (from can or jar)
2 tablespoons chili powder
2 tablespoons dried Mexican oregano or regular oregano
2 teaspoons ground cumin
1 teaspoon ground coriander
1 to 2 teaspoons hot sauce
1/2 cup shredded Monterey jack cheese
1/3 cup chopped fresh cilantro leaves
Salt and freshly ground black pepper


In a slow cooker, combine all ingredients but the shredded cheese, cilantro and salt and pepper. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
Five to 10 minutes before serving (depending on temperature of slow cooker) add couscous, cover and cook, until couscous is tender. Season, to taste, with salt and black pepper.

Just before serving, top each serving with shredded cheese and cilantro. Enjoy!!

Campbell's? Healthy Request? Chili & Rice

Prep/Cook Time: 25 min.
Ingredients:

3/4 lb. ground beef (85% lean)
1 medium onion, chopped
1 tbsp. chili powder
1 can (10 3/4 oz.) Campbell's? Healthy Request? Condensed Tomato Soup
1/4 cup water
1 tsp. vinegar
1 can (15 oz.) kidney beans, rinsed and drained
4 cups hot cooked regular long-grain white rice, cooked without salt


Directions:
Cook beef, onion and chili powder in skillet until beef is browned. Pour off fat.

Add soup, water, vinegar and beans. Heat to a boil. Cook over low heat 10 min. Serve over rice.

Serves 4

its like red chili but its white

instead of red beans and beef, it's white (navy) beans and chicken.

its like a chili thats wite it has beans and chicken it sorta spicy it depends on how people make it

1 to 2 cups chicken broth
1 small finely chopped jalapeno or serrano pepper (optional)
Flour tortillas
Condiments:
shredded Monterey Jack cheese or Mexican blend
sliced black olives
shredded lettuce
chunky salsa, purchased or homemade
sour cream
guacamole
PREPARATION:
In slow cooker, combine beans, 1 1/2 cups chicken broth, garlic, onion, white pepper, salt, oregano, cumin, cloves. Cover and cook on LOW for 4 to 6 hours. Stir occasionally. Stir in green chiles, chicken and 1 cup chicken broth.
If more broth is desired, add more chicken broth. For hotter taste, add diced jalapeno or serrano pepper. Cover and simmer for 1 hour.
Serve with warmed flour tortillas and condiments.
Serves 4 to 6.
