What are your favorite recipes?!


Question: I need a change. I cook the same old stuff all the time. Burritos, tacos, lasgna, spaghetti, baked maccaroni and cheese, bbq ribs, baked chicken, eggs with cheese...that's about it....I am not a fan of onions but I do cook with them sometimes. Bell peppers are yucky too. I don't do spicy.
Please help.

POTATO SKINS WITH CHEESE AND BACON

8 baking potatoes
2 lbs. bacon
1 lb. Cheddar cheese (shredded)

Bake potatoes until done. Cut in half and clean out majority of potato leaving skin and about 1/8 inch of potato. Fry bacon until crisp then crumble; set aside. Broil potato skins side until crisp (turn them one to two times). Fill skins with cheese. Top with bacon. These toppings can be varied - olives, tomatoes, salsa, chicken, ground beef, various cheeses. Broil until cheese is melted. Top with sour cream and chives.

and CHICKEN CREPES

CREPES:

3/4 c. all-purpose flour
1 1/2 tsp. sugar
1/4 tsp. baking powder
1/4 tsp. salt
1 c. milk
1 tbsp. butter, melted
1/4 tsp. vanilla
1 egg

Lightly grease 7" or 8" skillet. Heat (over medium heat) until butter bubbles. Beat all ingredients together until smooth. Pour 2 to 3 tablespoons batter into pan for each crepe. Cook both sides until golden brown, rotate pan so batter covers pan. Crepes can be stacked between wax paper. Cover to keep moist.

FILLING:

1 c. milk
1 c. chicken broth
1/4 c. all-purpose flour
1/2 tsp. salt
1/4 c. butter
2 c. cut up cooked chicken
1 1/2 c. sliced mushrooms and/or celery

Mix milk, chicken broth, flour, salt, pepper and butter in 2 quart saucepan. Heat to boiling over medium heat, stirring constantly. Boil and stir one minute. Stir in chicken and mushrooms which have been drained and chopped. Heat through. Heat oven to 350 degrees. Spread about 1/4 cup chicken mixture down center of each crepe; roll up. Place seam side down in ungreased oblong pan, 13"x9"x2". Combine one can of cream of celery soup with remaining chicken mixture and pour over crepes. Bake until hot, 15 to 20 minutes.

Crepes can be made ahead and kept in refrigerator up to 2 days. Wrap stacked, cooled, crepes in aluminum foil. To reheat: Place wrapped stacks in 350 degree oven for about 10 minutes.

I top with shredded cheddar cheese and melt

Mexican Lasagna

Serve with shredded lettuce, fresh sliced tomatoes, olives and sour cream.

INGREDIENTS
1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
1 (14 ounce) can peeled and diced tomatoes with juice
10 (6 inch) corn tortillas
1 cup prepared salsa
1/2 cup shredded Colby cheese


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly

i dont know if you are a fan of pork i wasnt until my mom made the best pork ribs ever it was sooo good so you can try that and there are always good recipes in home and cooking magazines i always try recipes that look good. After one time i made somthing using a recipe i started to cook with them a lot. maybe it can help you never hurts to try. good luck!

Spinach Pies (Similar to Greek Spanakopita)

These are very delicious and ridiculously simple to make. You can make them as spicy or mild as you like and can improvise by adding mushrooms, onion, ham, herbs or whatever you like. I use crushed pepper because I like them a wee bit spicy.

2 boxes frozen chopped spinach
1/3 cup feta cheese, can also use parmesan or minced swiss bits
TEENY sprinkle of dried, crushed red pepper (the hot kind, not bell pepper)
3 cans of crescent roll dough with 8 servings per can
1 egg, slightly beaten

Thaw spinach and sqeeze out excess liquid. Put spinach in a medium mixing bowl and add feta cheese and crushed pepper (use a very small amount, like 1/8 teaspoon or less if you don't like it spicy.) Mix together all ingredients with a fork until well blended.

Unroll crescent dough and using 2 triangles, press together to seal the seam between them to make a rectangular piece. Repeat this process with remaining dough, you should have 12 finished rectangles. Place 6 dough rectangles on an ungreased cookie sheet, top with a scoop of spinach filling, then press another triangle on top pushing all seams and corners together to seal it like a pie (or pasty). Repeat with remaining dough and filling. Bake in oven according to directions on dough container (generally about 375 for 9-12 minutes). You can bush each pie with a little beaten egg for a nice golden crust before putting it in the oven. This will make six tasty pies.
