How do i make cup cakes i need a good fool proof recipe?!
They're only meant to cook for 15 minutes but i once left them in for 45 and they were FINE :D
(makes 30)
2 cups self rasing flour
3/4 cup sugar
125g melted butter
3 eggs
1/2 cup milk
1/2 teaspoon vanilla essence.
(if you want them to be chocolate, put in 4 tablespoons of cocoa)
Mix everything together until its really smooth
Spoon into cupcake cases placed on a tray
Bake 15 minutes 180 degrees celsius
When cool, ice them
- Icing recipe
2 cups icing sugar
A drop of boiling water
2 tsp of cocoa for chocolate icing or 2 drops food colouring for coloured icing
Mix together and add a tiny bit more water if it needs to be runnier. If its too runny, add more icing sugar.

Easy peasy cupcakes
Makes 12
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
2 large eggs, cracked open
1 tsp vanilla essence
125g/4oz caster sugar
125g/4oz soft margarine
125g/4oz self-raising flour
To decorate (optional)
tubes of writing icing
marshmallows, white and coloured
food colouring, for icing
coloured sweets
Method
1. Heat the oven to 180C/350F/Gas 4. Put all the ingredients in a bowl and beat them together until the mixture is smooth and slightly lighter in colour.
2. Line a bun tin or cupcake tin with paper cake cases and half-fill each case with the cake mixture.
3. Cook the cakes for 18-20 minutes. You can tell they are done when they have risen up, are golden in colour, and spring back into shape when lightly pressed.
4. The cupcakes can be decorated using a basic icing, plus marshmallows, writing icing, food colouring and coloured sweets. You can even make a cupcake farm with animals such as sheep, piglets and dogs.
I use Betty Crocker Cake Mix.--and follow the instructions

Ingredients
? 2 cups all purpose flour
? 1 1/2 cups sugar
? 3 teaspoons baking powder
? 1/2 teaspoon salt
? 4 egg whites from large eggs
? 1/2 cup shortening
? 1 cup 2% milk

Preheat oven to 350 degrees. Line cupcake pans with paper liners. Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes. Fill liners 1/2 to 2/3 full of batter. Do not overfill. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely. Frost and decorate your vanilla cupcakes as desired.
Silky Vanilla Butter Frosting
1 cup sugar
1/2 cup all-purpose flour
1 1/3 cups milk
1 cup butter, softened
1 tablespoon vanilla extract
In 2-quart saucepan, thoroughly combine sugar and flour.
With wire whisk, gradually stir in milk until smooth. Cook over medium-high heat, stirring frequently, until mixture has thickened and boils. Reduce heat to low; cook 2 minutes, stirring constantly. Remove from heat and cool completely.
In medium bowl, with mixer at medium speed, beat butter until light and fluffy. Gradually beat in milk mixture; beat in vanilla.

This is a great recipe,they are delicious and have turned right every time I have made them.my friends are constantly asking when I am making the next batch.
