Favorit Spaghetti
2 lbs Italian sausage, casings removed (mild or hot)
1 small onion, chopped (optional)
3-4 garlic cloves, minced
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 1/2 teaspoons brown sugar
1 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
1/4 teaspoon fresh coarse ground black pepper
1/4 cup red wine (a good cabernet!)
1 lb thin spaghetti
parmesan cheese
In large, heavy stockpot, brown Italian sausage, breaking up as you stir. Add onions and continue to cook, stirring occasionally until onions are softened. Add garlic, tomatoes, tomato paste, tomato sauce and water. Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
Stir well and barely bring to a boil. Stir in red wine. Simmer on low, stirring frequently for about an hour. Cook spaghetti according to package directions. Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

Beef Stroganoff with noodles:

1lb hamburger
4ozs cream cheese
spoonful sour cream
1 jar heinz homemade beef gravy
salt and pepper
egg noodles, or rice

brown the hamburger, you can add some onion to it if you like, and also some mushrooms, canned are probably the best, I just don't like mushrooms. Boil your noodles and drain. For the sauce, heat up the can of beef gravy, cut up the cream cheese and mix with the gravy and add the sour cream and a little salt and pepper, you will probably need a little bit more salt, and make sure you salt your hamburger when you cook it. Its a very simple and really good recipe, the cream cheese gives it a nice zing, this is my husbands favorite recipe.

Linguine with white clam sauce. I love it, it's so refreshing compared to most "heavy" pasta dishes.

I like this at the olive garden..have not tried this recipe...

Copycat of Olive Garden's Portobello Mushroom Ravioli:

1 Pound Portobello mushrooms
1 onion
1/4 Cup butter
salt and pepper to taste

Dumplings:
1-1/2 Cups cake flour
2 eggs
1/2 tbsp salt
2 Tablespoons baking powder

Directions: Finely chop mushrooms. Peel and finely chop onion. Melt butter in a skillet and sauté the onion for approximately five minutes or until transparent. Add mushrooms and stir-fry over high heat for about five minute so that all liquid is evaporated. Reduce heat and cook for another five minutes. Remove from heat and let mixture cool. Place mixture inside the dough and create dumplings. Place dumplings in boiling water and boil for approximately 20 minutes until done. Melt the remaining butter. Pour over the ravioli, mix and serve. Note: You can use a mix of portobello and button mushrooms or Portobello only. Dumplings: Yield 15 - 20 dumplings Mix all ingredients together thoroughly. Roll dough on a flat surface until dough is 1/4 inch thick. Make circles of the dough.With fingertip or cooking brush, spread some water on the edges. Fill with mushroom mixture. Fold in half and squeeze gently.This will create the dumpling or ravioli. Continue with recipe,boiling for 20 minutes or until done (usually floats to top).Servings:4

Olive Garden's Ravioli di Portobello Sauce:

2 Cups medium white sauce ( see recipe below)
8 ounces smoked Gouda
2 or 3 sundried tomatoes, chopped
Heat slowly until cheese is melted.
Servings: 4

White Sauce

2 Cups milk
1/4 cup butter
1/4 cup flour

Heat butter in a sauce pan until it melts, whisk in flour and cook over medium heat for about 3 minutes. Whisk in milk and cook for about another 2 minutes until thickened.
Add 8 oz smoked gouda cheese and 2-3 chopped sun dried tomatoes. Mix on med-low heat until cheese is melted. Pour over mushroom stuffed ravioli. Top with chopped green onion and tomato.

A classic traditional pasta such as:

Spaghetti con burro e pomodori (Spaghetti with butter and tomato sauce)

Put pasta water on to boil. Salt it generously. When water boils, add in 1 package of (thick) spaghetti. Cook about 1 minute less than package indicates for al dente pasta.

In the mean time, melt 1/2 cup of unsalted, best-quality butter in a saute pan over medium heat. When butter starts to foam, add 2 cloves of minced garlic. Heat until butter smells garlicky and is completely melted then dump in a large can of whole, peeled tomatoes. Smash tomatoes up with a wooden spoon.

Continue simmering until sauce is reduced by about a third, 20 minutes or so. Salt and pepper to taste. Toss with hot, cooked pasta. Pass the grated parmesan or pecorino romano cheese.Serves 4 as a main dish or 6 as a starter.

Serve with Focaccia or loaves of Italian Garlic Bread,salad(I do spinach salad w/hot bacon dressing) andTiramsu for dessert.I have made this for a very nice change..for years my sister in law has made this for friends in a big nesco.Delicious!!! In fact....I'm making this for a group of 15 this week end for some eldery friends.


Spaghetti with Meatballs and Sausage


Meatballs:
1 lb. ground sirloin or chuck
1 onion, minced
2 cloves garlic, minced
1/4 cup fresh chopped parsley
1/4 cup grated Parmesan cheese
1/2 cup fine dry bread crumbs
1 egg, beaten
1 tsp. salt
1/2 tsp. black pepper
1 tsp. Italian seasoning
1/4 tsp. oregano
2 Tbsp. olive oil

Mix ground sirloin, onion, garlic, parsley, Parmesan, bread crumbs, egg, salt, pepper and herbs. You can add a little water if too dry. Shape into meatballs and brown in olive oil before adding to sauce.Let them finish cooking in the sauce.

For Meat Sauce:

Brown the sirloin or chuck, drain and set aside. Continue making the sauce as directed below and instead of adding meatballs, add the browned meat and stir to blend well.

Sauce:
1 large onion, chopped
4 garlic cloves, minced
2 red bell peppers, washed, cored and chopped
3 Tbsp. olive oil
1-2 country style pork ribs
1 lb. mild Italian Sausage cut into 2" pieces(I use Italian brats and take the casing off)
2 (28 oz.) cans crushed tomatoes with puree
1 Tbsp. fresh basil or 1 t. dried
1/4 cup fresh chopped parsley
1/2 tsp. crumbled thyme
1 tsp. salt
1/4 tsp. pepper
2 tsp. sugar
1/4 tsp. crushed dried red pepper
1 (6 oz.) can tomato paste
2 (8 oz.) cans tomato sauce
1/4 tsp. oregano
1/4 tsp. marjoram
1/4 tsp. rosemary
1 bay leaf
1 tsp. Italian seasoning
12 oz. cooked spaghetti
freshly grated Parmesan cheese

Brown the sausage and set aside. Saute onions,country style ribs, and garlic in large pot. Add tomatoes, paste and sauce and bring to a boil. Add next 13 ingredients, the browned meatballs, the browned sausage and simmer uncovered for 2 hours, stir occasionally.

Italian Sausages with Onions and Three Peppers
serves 3

1 package of Italian sausages
1 each green, yellow and red bell peppers, sliced thin
1 onion, sliced thin
2-3 garlic cloves,crushed
2-3 Tbsp. olive oil

Heat the olive oil in a large skillet and put all the ingredients in the skillet. Cook over medium heat stirring the ingredients often and watching that the garlic does not burn. Cook until the onion is golden and the sausages browned. Yum!!!

Garlic Bread with Feta

1 loaf Italian or Focaccia bread,cut in half
1 stick (1/2 cup) butter, softened
3 garlic cloves, crushed
4 oz. feta cheese, crumbled
1 tsp. oregano
1 tsp. basil

Mix the butter with the garlic and blend well. Blend in feta and seasonings and spread on bread. Bake in oven at 350 for about 15 minutes till bubbly.

Tiramisu

5 eggs, separated
3/4 cups sugar
1 tsp. vanilla
6 tbsp. cognac
16 oz. mascarpone cheese,room temp.(not the same if you use cream cheese)
2 pkgs. ladyfingers
1 cup strong expresso
cocoa powder to dust

Beat egg whites until stiff. Set aside.
Beat egg yolks well. Slowly add sugar and beat until very creamy. Add vanilla, cognac, and cheese. Blend well. Fold in beaten egg whites. sprinkle ladyfingers in expresso, place on bottom of glass 9x13-inch pan. Cover with cheese mixture, repeat layer. Dust with powdered cocoa. Refrigerate at least 4 hours or better overnight.

Smoked Salmon and Cream Sauce Spaghetti
2 tablespoons olive oil
1 cup button mushrooms, finely sliced
1 cup dry white wine
1 1/2 teaspoons chopped fresh dill or 1 teaspoon dried dill
1/4 cup fresh chives, snipped
1 1/4 cups very low fat unsweetened soy cream or low fat fromage frais
8 ounces smoked salmon, cut into thin strips
ground black pepper
lemon juice
12 ounces fresh spaghetti or linguine
chives (to garnish)

Heat the oil in a large nonstick frypan.
Add the finely sliced mushrooms and fry them over gentle heat for 4 to 5 minutes, until they are softened but not coloured.
Pour the white wine into the pan.
Increase the heat and boil rapidly for about 5 minutes, until the wine has reduced considerably.
Stir in the herbs and soy cream or fromage frais.
Fold in the salmon and reheat gently, but do not let the sauce boil or it will curdle.
Stir in pepper and lemon juice to taste.
Cover the pan and keep the sauce warm.
Cook the pasta in a large saucepan of lightly salted boiling water until just tender.
Drain, rinse thoroughly in boiling water and drain again.
Turn into a warmed serving dish and toss gently with the salmon sauce before serving, garnished with chives.

Ciao! I'm an italian girl that just moved to the states! I have 2 great recipes for you! One is with smoked salomn and the other with vegetables.

SMOKED SALMON AND MASCARPONE CHEESE PASTA 4 serving ( u can add pasta, salmon and mascarpone in the quantity you prefered)
Cooke 400 gr pasta al dente as you always do.
mean while, in a fryed pan, heat 4 spoons of olive oil. Add 250 gr SMOKED salmon to it (it needs to be cut in little squares, like half inch squares). Cook it for like 4-5 minutes, just the time to see it turning from dark red-pink to light pink. While the salmon is cooking take 250 gr mascarpone cheese (you will find it in every supermarket) and mix it with 1/2 tablespoon of lemon juice and 1 table spoon of heavy cream. When the pasta in ready, mix it with the salmon and the mascarpone cheese , put it in a casserule and in the heaven untill the mascarpone cheese is melted. Serve it hot.

PASTA CON SUGO DI VERDURE
4 sevings
you will need
400 gr pasta
3 carrots
1 onions
3 peppers
1eggplant
4 zucchine
3 fresh-peled tomatoes
5 slices of bacon
2 tblespoon of sourcream
What is important in this recipe is that the vegetables need to be cut in very very small pcs...as small as you can and this will take all of your patience! The vegetables also need to stay separate untill it's time to mix it with the pasta.
So, in a fried pan, heat 1 tbs of olive oil, add the onions and the peled tomatoes. Cook them untill their water is gone and put them in a dplate. Then take a other spoon of olive oil, heat it and cook the 3 carrots. When you done it, do the same with the 3 peppers, the 1 eggpalnt, the 4 zucchine, one type of vegetable at the time ( u can use the same pan thou). After you done with the veggies, cook the bacon (it needs to be cutted in small pcs as well)
When all is cooked, you can go ahead and cook the pasta. When it's ready, take a big fryed pan. Add some olive oil, the pasta and all the veggies, the bacon plus the sour cream. Mix them all together with the heat on. You can prepare this sauce in advance if you want and keep it in fridge for 5 days.

~~~~~PASTA SHELLS WITH RICOTTA CHEESE
STUFFING
1 (16 oz.) box lg. shells, cooked
1 lb. Ricotta cheese
1/4 c. diced Prosciutto, cooked
Ground veal or spinach
1 egg, lightly beaten
2 c. hot tomato sauce
Preheat oven to 350 degrees. Beat Ricotta, Prosciutto and egg together in a large bowl. Stuff approximately 2 tablespoons of the cheese mixture into each shell and place in a baking pan. Cover with aluminum foil and bake 15 to 20 minutes. Arrange shells on serving plates and pour hot sauce over.

What you need:
3 tons of noodles
A moose
One huge spoon
Rice Krispies
Honey
A Rock
1 Apple
Oven
Pasta

Put the noodles in a bowl and shave the moose. Add the moose hairs and mix them into the noodles with the spoon to big to fit into the bowl. Seperately mix the honey with the Rice Krispies until you get a mush. Slice the apple, and add that. Grind up the rock into dust for seasoning. Then add the pasta and place it in the oven at gas mark 7 at 120 C for 3 and a half thousand years. Take it out and Mmmm Yummy!
