I need a recipe for really good mashed potatoes?!


Question: Mashed Potatoes
6-8 large baking potatoes 12 shallots
12 cloves garlic 1 Tbl. olive oil
2 sticks unsalted butter 2 cups heavy whipping cream
Salt & pepper to taste
Directions
Peel garlic and shallots. Season with salt and pepper. Toss in olive oil. Wrap in foil and roast at 450 degrees for 15 minutes. Puree the garlic and shallots in a food processor or blender.
Cut potatoes into 1/2 inch pieces. Put in a pot with enough cold water to cover them by 2 inches. Bring water to a boil and salt to taste. Simmer potatoes for 15 minutes until they are very tender. Drain potatoes. Run them through a food mill, ricer or masher until they are smooth.
Bring butter and cream to a boil. Fold into the hot potatoes. Add garlic and shallot puree. Season with salt and pepper to taste. Serves 6-8.

Wash and cut the potatoes you prefer in chunks all the same size so they cook evenly. Skin on or off your choice here. I like the skins on.

Drain once cooked tender and add them to a bowl. Dollop on some butter (the real stuff), salt and pepper to taste and add sour cream (your choice how much), sprinkle on the chives and mix well. If they are too thick and you need to unthicken them use a tablespoon of cream at a time until you reach the consistency you want.

You can add cheese, garlic, bacon crumbled. You can cook the potatoes in chicken stock and add more flavor to them The possibilities are endless.

Potatoes, cream cheese, sour cream, cheddar cheese and a splash of buttermilk. Or just get the bag of Idaho Instant Mashed potatoes. They have all sorts of yummy flavors. Loaded Baked Potato is GREAT.

I make this all the time... it's fantastic

ROASTED GARLIC MOZZARELLA MASHED
POTATOES

3 lbs yukon gold potatos
half and half
1 cup grated mozzarella cheese
5 cloves garlic
salt and pepper
1 egg

Peel potatoes, halve and boil for 25 min. Do not cut up into little pieces as you will make the mashed potatoes watery.
Coat garlic on skin with olive oil and bake at 350 for 15 min.

Set aside drain potatoes and add enough half and half while mashing to get the consistancy you want. Squeeze garlic out of skins into the mash, add egg and cheese, mix rapidly and add salt and pepper to taste. Good sea salt goes a long way for taste.

Serve promply, don't let it sit around as the cheese loses it's stringy effect.

okay here it isone whole stick of butter ,heavy cream ,some sour cream lots of cracked blacked pepper and some salt !!! now whip with a hand held mixer till light and fluffy and i am telling you peeps will rave !

1 white potato to 1 sweet potato (of equal size). add in a little butter and brown sugar.

You can put into mashed potatoes whatever you want. Potatoes, butter, milk are the usual, but you can also add Parmesan cheese, sour cream, garlic, cheddar cheese, and just about anything else your imagination can come up with. I do think the difference in mashing potatoes is using a potato ricer or a food mill. I hope this helps.

Traditional Mashed Potato Recipe - Comfort Food
Preparation time: 15 minutes. Serves 15-16.


Ingredients:
8-10 pounds of starchy potatoes such as Russet or Yukon Gold
1 tablespoon Kosher salt (less if you use regular salt)
1/2 - 3/4 pound room temperature butter (2-3 cubes per your taste)
1-2 cups heavy cream (whipping cream) or milk
1 - 1 1/2 teaspoons white pepper (if desired)

Instructions:
Peel potatoes and cut into same size pieces
Place the potato pieces in a large pot of cold water as you peel them so the potatoes will not turn brown
Cover with cold water, add salt and bring to boil
Turn heat down to allow potatoes to simmer until just soft (do not over cook or the potatoes will turn watery)
Pour water off (or save for another use)
Heat cream or milk but do not boil
Mash potatoes with a hand mixer or stand mixer
Add butter and mash until incorporated
Add hot cream or milk (add only enough until potatoes are the right consistency) and mash until smooth but with a few lumps
Add salt and pepper to taste
Cover the pot with a kitchen towel and then plastic wrap and then a tight fitting lid to keep warm or transfer to a covered casserole dish

Option: transfer to a crock pot on warm, cover with kitchen towel and then the crock pot lid

To serve: uncover, stir lightly and top with more butter.

Drain all the water off your boiled (Russet or Idaho are awesome for mashing as they aren't as gummy when mashed as some of them) potatoes and add up to a stick of butter (if you are preparing over 10 potatoes?)and choose one of these: milk, cream cheese, sour cream, heavy cream or half and half. I never forget to add freshly ground sea salt and freshly ground peppercorn medley (I think there is 7 kinds in mine). Sometimes to add more of a different twist to the mashed potatoes I use garlic powder (If I leave skin on red potatoes) but last time I used dill. Once I used Chicken broth. I love to experiment with different herbs. have fun.

I boil my skinned Potatoes till they are soft. Then I drain them and put them in a bowl with maybe 2 or 3 cups milk and a lot of butter. then I mix them till they are creamy and add salt and pepper to taste...and more butter if needed. People seem to like them, especially my boyfriend!

Honey-Butter Baked Chicken with Mashed Sweet Potatoes

1 (3 to 3 1/2-pound) whole chicken, rinsed and patted dry
1 tablespoon kosher salt
1/2 teaspoon fresh cracked black pepper
6 tablespoons honey
1 lemon, zested
1 tablespoon lemon juice
1 tablespoon room temperature unsalted butter
1 tablespoon fresh thyme leaves
Mashed Sweet Potatoes, recipe follows

Preheat the oven to 400 degrees F. Arrange a rack inside a large roasting pan and set aside.
Season the chicken both inside and out with the kosher salt and black pepper.

In a small bowl, combine the honey, lemon zest and juice and butter. Place the chicken on a rack in a roasting pan breast side up and roast until lightly browned, about 15 minutes. Using a pastry brush, brush half of the honey mixture over the chicken, as well as sprinkling half the thyme over the chicken and return the chicken to the oven. Continue to cook another 30 minutes, or until an instant-read thermometer inserted in the thickest part of the thigh registers 180 degrees F. Remove the chicken from the oven and brush the remaining honey blend and sprinkle the remainder of the thyme over the chicken.

Remove the chicken from the oven and transfer to a platter or cutting board to rest for 10 minutes before carving.

To serve, spoon the sweet potatoes into the center of 4 large plates and arrange the chicken on top. Drizzle the chicken with any remaining pan juices and serve immediately with the sweet potatoes.

Mashed Sweet Potatoes:
2 pounds sweet potatoes
1/2 cup heavy cream
3 tablespoons light brown sugar
3 tablespoons butter
2 tablespoons cane or maple syrup
Pinch salt and pepper
1 teaspoon fresh thyme leaves, optional

Preheat the oven to 350 degrees F.
Place the potatoes on a foil lined baking sheet and bake until tender and begins to ooze sugary syrup, about 1 hour and 15 minutes. Remove from the oven and let sit until cool enough to handle.

Cut the potatoes in half lengthwise and scoop out the flesh with a spoon into a large bowl. Add the cream, sugar, butter, syrup, salt and pepper, and thyme, if using and mix, mashing until the potato mixture is smooth. Cover to keep warm until ready to serve.

Any of the above recipes sound wonderful, but my suggestion would be to add fresh bits of bacon. It adds texture and flavor like nothing else.

all the recipes are wonderful I can't wait to try some of them but one thing I would like to mention, I like lumps in the mash so don't mash too much.

SIMPLE: Boil 4-6 potatoes in salted water for 30 min. drain and mash. Then add 1/4 to 1/2 cup of milk or heavy cream. Beat well...depending how creamy you want them and then add 1/2 Cup butter and 1 teaspoon of minced garlic from a jar and beat again... UNBELIEVABLE and easy

I use the little Yukon gold potatoes cut them in half and boil them about 20-30 minutes
Chop about 2-4 garlic cloves and add it to the potatoes as they boil.
While the potatoes are boiling, I chop up about a 1/4 of a pound of bacon i had grated about 1 cup of white cheddar cheese, 1 cup of jalapeno cheddar cheese and 1 cup of mild yellow cheddar cheese. Chop up one shallot really fine.

Drain the potatoes and garlic and place back in the pan they were boiled in on the stove, add anywhere from 1 - 2 stick of real butter and 1 - 1 1/2 cups of milk. Use a potatoe masher and mash them up but leave a few lumps...better that way once mashed add your bacon. about a 1/4 of a cup of chives, add the shallots, with a spoon mix that together, add more milk and butter if needed then add all the cheese (except for a little of each pile) in mix until all combined. place in a casserole dish and sprinkle with the left over cheese that you saved and also a little bit of bread crumbs. Place in the over for about 5 - 10 minutes under the broiler under the cheese is melted and serve.

Actually, i use this mix thingy. you just add water i think and put in microwave. ITs called Betty Crocker mashed potato buds. it tastes realllyyy good :]
