What did everyone have for dinner today?!


Question: I thought the cold weather would call for soup. I made Italian Chicken Vegetable soup .........my Aunt Dorthy's recipe (she is Italian). Some crusty Italian garlic bread and a nice fresh salad. What about you? Feel free to include the recipe! Thank you!

I made chicken pecan fettuccini.

10 oz fettuccini made al dente

Melt 1/4 cup of butter and add a few drops olive oil to a hot dutch oven. add:

1 lb of chicken breast
1 pkg fresh sliced mushrooms
1 cup green onions
3 cloves chopped garlic
salt & pepper
1/4 cup cooking sherry

After chicken is fully cooked through and mushrooms are soft, then put this mixture in another bowl for now. Using the same pan (and no you don't even have to wash it)

add:
1 pint cream (whipping cream)
1/4 cup butter
1/2 cup grated romano or parm
some fresh parsley chopped

add the pasta in and combine well and then add the meat mixture back in and again combine well.

In a skillet toast some chopped pecans until just fragrant. Shake pan constantly to keep nuts on the move. Don't let them burn. Pour over the pasta in the dutch oven and sprinkle on some more grated cheese.

Yours sounds better than ours, we wnt for sushi, and although it was GREAT, staying home with a warm bowl of soup sounds better!

Chicken and dressing, green beans , mashed potatoes, gravy and bread.

Noodles, sauce, heat until warm.

I'm making turkey lasagna (found it on rubyglen.com) with garlic bread and salad. Maybe a glass of red. ;-)

INGREDIENTS
3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined
skewers




DIRECTIONS
In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

I went out for dinner.I had chicken with bacon covered with mushrooms and a thick layer of chedder cheese,a salad,with mac&cheese(small).
But what your having sounds great!

i had vegetarian sausage baked bean hotpot for lunch at work (beans, tin tomatoes, worcester sauce, chili powder, tomato puree, green peppers and red onion.) and vegetarian burgers with coleslaw, salsa and lime nachos for dinner. (there were no burger buns i had to imrovise)

I made homemade chicken noodle soup, my husband is sick so I knew he would enjoy it, i've never made it before and it turned out fabulous!

I pounded some boneless skinless chicken breasts, layered deli slices of provolone and pancheta. Seasoned the breast, before layering with seasoned salt. Folded after putting the layers in and sprinkled with paprika. Cooked at 350 until the breast were about 140 and poured commercial Alfredo on it. Continued until the breasts were 160. Egg noodles and crusty bread on the side.

Home made stew with bread bowls from bakery.

I'm about to have hamburgers.

Recipe: 2 1/4 lb hamburgers, thawed in the microwave. Buns toasted on Warm in the oven.

Fry hamburgers in 12" frying pan, remove buns from oven and coat bottoms with mayonnaise and pepper. Add hamburgers and top patties with A-1 sauce and sliced onions. Delicious.

split pea soup with ham hocks. Yum-yum! Here is the recipe, I added some dry savoury and one bay leaf, cause I like them with pea or beans. Make sure you boil the ham hock a little bit more, mine wasn't done enough after 1 h
