How do you make breakfast burritos?!
Answers: With bacon instead of sausage. And do you shread the potatoes or just dice them up?
scramble some eggs and then you can also cook some sausage, bacon or cook chorizo in with the eggs.
warm a flour tortilla and put the eggs and meat on one side of the tort. fold the bottom up and then roll it you can top with cheese and salsa and whatever else you like before rolling..enjoy
I don't even put potatoes in mine. Mine are sausage patties sliced up, scrambled egg, cheddar cheese and salsa & sour cream rolled up in a warm flour tortilla. You could sub bacon I guess....but sausage is the way to go.

12 slices bacon, diced
12 eggs, lightly beaten
salt and pepper to taste
10 (8 inch) flour tortillas
1 1/2 cups shredded Cheddar
cheese
1/2 cup thinly sliced green onions or green bell peppers
**NOTE**
For potatoes, best bet is to use either Bob Evans shredded hash browns or Simply Potatoes southwestern style (green package). Both found in refridgerated section near butter. Cook as directed before freezing for later use.
DIRECTIONS:
1. In a skillet, cook bacon until crisp; remove to paper towels. Drain, reserving 1-2 tablespoons drippings. Add eggs, salt and pepper to drippings; cook and stir over medium heat until the eggs are completely set.
2. Spoon about 1/4 cup of egg mixture down the center of each tortilla; sprinkle with cheese, onions and bacon. ** then add hash browns if desried. Fold bottom and sides of tortilla over filling. Wrap each in waxed paper and aluminum foil. Freeze for up to 1 month.
3. To use frozen burritos: Remove foil. Place waxed paper-wrapped burritos on a microwave-safe plate. Microwave at 60% power for 1-1/2 to 2 minutes or until heated through. Let stand for 20 seconds
lightly cook what ever meat and veggies you want in your buritto like you do for an omlet then scramble your eggs into this cook until done stirring to scramble together. warm up your flour tortilla add ingredients with shredded cheese wrap up and enjoy
Breakfast burritos can be just about anything you want them to be. Basically they're just scrambled eggs with whatever you'd like to have in them.
Shredding or a small dice would be fine for the potatoes, but make sure to cook them before adding to the eggs and bacon. The eggs cook very quickly and the potatoes won't have time to get done if put in raw.

Sausage, egg, cheese, diced fried potatoes and salsa. Potatoes are a must.
Buy & cook the frozen shreaded hash browns if you like potatoes in them, and want to save time...scrambled eggs, meat, peppers & onions, salsa, sour cream. Done.
I don't use potatos either. I use a pound of sausage, crumbled and well-browned. I make some scrambled eggs. I put grated cheese in one bowl and salsa in another. People can fix their burritos however they want - a little salsa, alot of cheese, whatever they want. You could just use whole cooked strips of bacon if you wanted to use bacon in them, that would probably be good instead of the sausage.Cook bacon according to package directions. Basically you just put it in a hot frying pan, when it starts to brown, turn it and cook to desired doneness. Some people like bacon crispy, others don't. To make the eggs, break 6-8 eggs into a bowl. Add a couple of tablespoons of milk or half and half. Beat well. Melt butter in pan over medium heat. Add eggs. Stir frequently while cooking. Cook to desired doneness. Some people like their eggs softer, some like them firmer.
Place the bacon, eggs, salsa and cheese in the middle of a warmed tortilla. Roll up and enjoy.
mmmmm yes breakie burrito. If going mexicano with salsa and condiments as such i would definately do sausage. Bacon if doing a bacon tomatoe cheese style. In either of them yes the red and yellow peppers are sweeter and would be great. Your going all out adding in potatoes, you can shred and fry then put in, or dice nice and small and fry and put in. sounds great you've got a winner, love the red bell pepper ( i like a bit of garlic fried with my sausage or fried with the peppers awwwww yeah). You can cook all ingredients seperate and then assemble together in burrito just like you would a sandwich wrap.
This is how I do it. It's super easy and you can change it to suit your taste.
1 package of bacon, cooked and crumbled into small pieces
1 package of tortillas (flour, 10 inch)
1 package of your fav shredded cheese (I like colby jack)
approx. 10 eggs, scrambled (more or less depending on how full you stuff your burritos)
optional:
1 pound pork sausage, cooked and crumbled into small pieces
bell pepper, diced
yellow onion, sauteed and diced
hashbrowns, baked (the frozen ones work great)
- mix all ingredients except tortillas in a large bowl
- warm each tortilla either in the micorwave for 15 seconds or in a skillet over low heat for 15 seconds
- fill each tortilla with 2 - 3 tablespoonfulls of egg/meat/cheese mixture and roll tightly
With burritos, you can bacially put whatever you like, and experiment with different combinations until you get the one that tastes best. Thats why cooking is so much fun!
I would use whole wheat tortillas. I would fill it with scrambled eggs, cut turkey bacon, a bit of cheddar or some type of cheese, and maybe some salsa or hot sauce. I wouldn't put potatoes with mine, maybe on the side, but not in it. But if you want to use potatoes, shredded would be better for rolling up the burrito.You don't want to overstuff it. Try adding tomatoes, spinach, mushrooms, or tofu too.
