I am a former chef and had a great meal in London's east end at the Pie shop named G.Bells, I also had some of there famous jellied eels, but that is another story, the sauce is from my opinion a light veloute made with a flour and stock base with a good load of fresh chopped parsley added, if your an experienced cook from scratch is no problem, but if not I would buy a package of either the store brand or Knorr veloute sauce mix, and a bunch of fresh parsley, make the sauce as directed or from scratch and to finish add the parsley (chop it as fine as you like).
I say this as then the parsley will not bleed, and not change colour, in a pinch dried is fine, the sauce should be flavourful, not salty but had a good taste.
