Answers: I have tomatoes and garlic and stuff, pasta or potatoes???

Oh- those sound like yummy ingredients!

Personally first thing i thought of was pounding out the chicken breast and putting mozzerlla panchetta and basil inside. then rolling it up and securing with toothpicks and cooking that.

Then maybe i said of potatoes.. you could slice them thinly and coat with olive oil and salt and pepper and bake them.

Oooh, I know, I know!

Slit the chicken open and stuff it w/ a stack of mozzarella, a bit of chopped garlic, and basil leaves.

Dice pancetta, fry up in an oven-safe skillet or pan. Remove pancetta and nearly all the fat. Brown chicken on both sides in paancetta grease, add some chicken stock, deglaze pan, put cooked pancetta back into pan, and finish by baking in 350oF oven for about 30 min or until juices run clear. You can then use the pan juices as a sauce for pasta.

get chicken breast, slice mozzerella and place on chicken then wrap in bacon and cook. lightly fry garlic in oil, if possible olive oil then add tomato and torn basil to the sauce and let reduce then add sauce to cooked chicken.

If it is boneless chicken breast, then cut a pocket in the breast and fill with the basil and panchetta. Put a little oil in a pan and brown the chicken for a few minutes. Then put the chicken in a oven proof dish and cook until done. Saute alot of onion, garlic, and green peppers. Then add a can or two of tomato sauce and add alot more basil and oregano. Let simmer for a hour or two, probably should start this before doing the chicken. Then cook pasta when chicken is almost completly cooked. Put pasta on a plate with chicken on top then your sauce and then the mozzerella.

Keep the chicken, and send the rest to me :)

Sorry, I couldn't resist!! I'll keep an eye on this question, want to see the ideas you'll get.

Happy weekend!! :)

Hugs!!
