Has anyone heard of fried corn ? Like nuggets maybe ? I ate some today they are good . I want to know how to?!

hmmm like corn fritters?

corn fritters
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white sugar
2 cups whole kernel corn
1 egg, lightly beaten
1 tablespoon shortening, melted
1/2 cup milk
3 cups vegetable oil


Directions:
1. In a mixing bowl, combine flour, baking powder, salt and sugar. Stir the corn kernels into the dry mixture.
2. In a separate mixing bowl, beat egg, melted shortening and milk together. Pour the wet mixture into the dry and stir until blended.
3. Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
4. Drop spoonfuls of the fritter batter into the hot oil and fry until golden; drain on paper towels.

DIRECTIONS


1. In a medium bowl, stir together the flour, baking powder, salt and
pepper. Make a well in the center, and pour in the egg, milk, whole kernel
corn, and cream-style corn. Mix until all ingredients are combined.
2. Heat the lard in a skillet over medium-high heat. Drop
tablespoon-sized dollops of batter onto the hot skillet, and fry for 2 to 3
minutes on each side, or until golden brown. Serve with butter and salt, and
a cold glass of milk.


Potato Corn Fritters

3 cups frozen corn, thawed and drained
2 pkgs. (8 1/2 oz.) corn muffin mix
1/2 cup fresh basil, chopped
1/2 cup fresh sage, chopped
3 eggs
1 1/2 cups milk
1 pkg. (20 oz.)Refrigerated Hash Brown Potatoes
2 Tbsp. sugar
2 tsp.salt
1/2 tsp. black pepper

Mix all ingredients together. Heat oil in deep fryer to 325°. Drop tablespoon
size potato mixture in heated oil. Cook 4 to 5 mins or until golden brown. Drain
browned fritters on paper towel.

Dipping Sauce:
1 jar (12 oz.) apricot preserves
1/4 cup mayonnaise
1/4 cup sour cream
Zest and juice from 1 lime

Combine all ingredients and serve with Corn Fritters Also try your favorite:
Marinara Sauce or Horseradish Sauce
Makes 30 fritters


Corn & Pepper Fritters

1 1/4 cup whole-kernel corn
1 cup red bell pepper, finely chopped
1 cup scallions, finely chopped
1 tsp jalape?o, finely minced (opt)
1 tsp ground cumin
1 1/4 cup flour
2 tsp baking powder
Salt to taste
Black pepper to taste
1 cup milk
4 Tbsp oil

Put the corn in a mixing bowl along with the chopped pepper,
scallions, and hot pepper sprinkle with the cumin, flour, baking
powder, salt, and pepper; stir to blend. Add the milk and stir to
blend thoroughly heat enough oil to barely cover the bottom of a non
stick skillet. Spoon the batter in 1/4 cup batches into the skillet
and cook until golden brown on one side, about 2 minutes turn the
fritters and cook about 2 minutes on the other side. Add more oil to
the skillet as necessary for each batch.Yield: 12 fritters

I've heard of corn fritters. Here's an easy recipe for them that you could easily make a bit more 'Mexican' by adding some chopped up peppers or spices:

Easy Corn Fritters

2 cups water
1 egg
1 pinch ground black pepper
1 (6 ounce) package potato pancake mix
1/4 cup milk (optional)
1 (11 ounce) can whole kernel corn
1 quart vegetable oil for frying

In a mixing bowl combine water, egg, and pepper; stir with a fork until well beaten. Stir in pancake mix; continue stirring until combined. If the mixture is dry and crumbly add 1/4 cup milk. Mix in the corn, cover and let stand 10 minutes or until firm.

Heat oil at medium high in a large skillet. After heating for 5 minutes spoon mixture in 2 tablespoon size lumps into skillet. Do not crowd the skillet. Flip each fritter after the bottom side is golden brown. Drain on paper towels and repeat until the mixture is gone.

Fried Corn

6 ears corn
2 tablespoons fresh bacon drippings or butter
1/2 teaspoon salt
2 teaspoons sugar
1/4 teaspoon black pepper
PREPARATION:
Slice the corn from the cob. Scrape the cob downward to get any remaining corn left near the cob. Heat a heavy skillet and add the bacon fat or butter. When hot, add corn and cook for 15 to 20 minutes, stirring often.
Sprinkle with the salt, sugar, and pepper. Serve hot.
Serves 4 to 5

You can often find frozen corn nuggets in the freezer section of the grocery--they are popular as a food item for kids at schools, camps, etc. Depending on the brand, you either deep fry them (usually commercial brands) or bake them (to reheat types that are fried before being frozen). I don't know about the Mexican connection, but, you can also make corn tamales by adding corn to prepared masa harina; if you fry them, they would come out similar to hush puppies with corn.

Corn nuggets are delicious.You can find them at Walmart in the frozen vegetables or appetizer section or order them from Schwann's if you don't want to make them homemade.Church's Chicken has some on their menu also.

Corn Nuggets


2 eggs
1/2 cup milk
1/2 cup half-and-half cream
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter, melted
2 teaspoons sugar
1/4 teaspoon paprika
2 1/2 cups corn (fresh cut off the cob)



1. Cut corn off cobs and set aside.
2. Mix eggs until thick and creamy.
3. Mix in remaining ingredients and fold in corn.
4. Drop rounded teaspoons into 375o deep fryer and fry until golden brown.
5. Stir often to allow all sides to cook evenly.
6. Drain on paper towels and serve hot with a side of your favorite ranch dressing.

Corn Nuggets

2 eggs

1 cup milk

2 cup flour

3 teaspoons baking powder

1 teaspoon salt

2 tablespoons shortening

1 teaspoon granulated sugar

1/4 teaspoon paprika

2 cups drained whole kernel corn

Beat eggs, and stir in remaining ingredients.

Drop from a spoon into deep fat and fry until brown.

all you need is corn on the cob,milk ,flour and butter and a good frying pan
