At what temp. on the meat thermometer is a bottom roast have just a touch of pink in middle in the crockpot?!

140 with the thermometer in the center of the roast, be sure not to let the probe touch the bottom of the pan as this will give a false reading. The temp would be the same to get your choice of doneness to your roast, no matter what you are cooking it in, crock pot, oven, grill.......the internal temp would still need to be 140.......Good Luck!
I'm guessing that you are making pot roast. If this is so, then don't worry about the temp. When pot roast is done, it will read about 212 F (after you test it for tenderness).
However, if you are attempting to cook a roast and have it less than well done, then use these guide lines:
rare to medium rare: 130 F to 140 F
medium: 140 F to 145 F
well done: 155 and above
