3 pounds medium russet potatoes
1 1/4 cups mayonnaise
1/2 cup sour cream
1 tablespoon prepared mustard
1 tablespoon white vinegar
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 cup finely chopped celery
1/2 cup finely chopped red onion
1/2 cup finely chopped green bell pepper
2 tablespoons finely chopped pimento
1 tablespoon finely minced seeded jalapeno
5 hard-boiled eggs, finely chopped
1/4 cup pickle relish
Combine the potatoes with enough water to cover in large saucepan. Bring to a boil. Boil until tender but not mushy; drain. Chill in refrigerator. Peel potatoes and coarsely chop. Combine mayonnaise, sour cream, mustard, vinegar, salt, sugar and pepper in a bowl and mix well. Stir in celery, red onion, green pepper, pimento and jalape?o. Fold in potatoes, eggs and pickle relish. Chill, covered, until serving time. The flavor is enhanced if chilled overnight. Garnish with paprika.

I recommend adding seasoning (pepper, little bit red pepper, salt, garlic powder), fresh chopped celery, hard boiled eggs, and milk. But the key is to mix all your ingredients first and then add to potatoes, once you have it just the way you like the seasonings. this way it won't break up the potatoes too much. Milk helps make it creamy.

4 c. cubed cooked potatoes
1 c. chopped celery
3 chopped hard cooked eggs
? cup. Chopped red onion
? cup. dill pickle relish
2 tbsp. chopped parsley
2 tbsp. chopped pimento

Dressing:
1 qt. Miracle Whip
1/2 c. sugar
1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)


Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.

4 eggs

1 clove garlic, minced

DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.

Loaded Baked Potato Salad


6 servings 30 min 15 min prep

8 potatoes, cubed (half peeled or half with skin)
2 teaspoons salt
6 slices bacon, diced & crisp cooked
6 green onions
2 cups cheddar cheese, shredded
16 ounces sour cream
1/4 teaspoon pepper
1 cup Miracle Whip

Cube and boil potatoes with salt.
Drain.
Crumble bacon and slice onions (including tops).
Combine sour cream, pepper and Miracle Whip.
Add to potatoes.
Add bacon, onions and cheese (reserve some of each for top).
Mix with potatoes.
Pour into baking dish.
Top with reserved cheese, onions, and bacon.
Bake 350 for 10-15 minutes (until cheese melts).

8 boiled potatoes
1 stalk celery diced
2 hard cooked eggs sliced
1 onion minced
1 T minced parsley
2 eggs well beaten
1 cup sugar
1/2 cup cider vinegar diluted with
1/2 cup cold water
1/4 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper

Even people who do not like potato salad like this. I myself have never been crazy about potato salad with mayonnaise because living in PA Dutch country I have been raised on the PA Dutch style potato salad. Give it a try and let me know how you like it.
Boil potatoes in their jackets. When soft, peel and dice. (I leave skins on) Add celery, hard cooked eggs and onion. Fry bacon in skillet until crisp & brown. (Do not drain) Beat the eggs, add the sugar, spices, vinegar and water. Mix well. Pour the egg mixture into the hot bacon and fat and stir until mixture thickens. (abou 10 mins.) Pour over potatoes and stir to mix well. Refrigerate for several hours or overnight stirring once or twice.
