What is a good baked mac and cheese recipe using Velveeta? I know you'd need to add milk too, but how much?!


Question: I've found that a combination of cheeses makes the best flavored Mac and Cheese. Velveeta is one of my favorites in addition to a sharp cheddar and even some gorgonzola or cambozola bleu.

Make a white sauce while your macaroni is cooking. You'll need 1/2 cube butter and 3 T flour to start. Melt your butter and add the flour. Stir until thick and cook for 1 minute. Add 1 1/2 cups whole milk and stir until thickened. Flavor with 1 tsp kosher or sea salt and 1/2 tsp fresh ground pepper. Add more milk if sauce is too thick. Add 1/2 of your Velveeta to this mix and stir to melt. You can also add 1/4 cup bleu cheese or gorgonzola as well if you like. Add 1/2 tsp hot sauce. Layer 1/2 of the macaroni in buttered baking dish. Top with 1/2 of the sauce and 1 cup shredded cheddar cheese. Dot with 1/2 of the remaining velveeta. Top with remaining macaroni and sauce. Top with 1 cup shredded cheddar cheese and remaining velveeta. Mix 1 cup bread crumbs with 1//2 cup parmesan and sprinkle on top of macaroni. Dot with butter, cover and bake at 350 degrees for 45 minutes or until bubbling.

This recipe doesn't call for Velveeta, but you could use it. I have made this recipe before and it is excellent. The leftovers I used to make fried macaroni and cheese, which was even better!
