How hot should I heat a pan for sauteeing???!


Question: Heat the pan first then add oil NEVER evoo it WILL burn , use a high temp oil and heat till the oil shimmers.not smokes Heating the pan properly may take from 3-6 min depending on thickness material of pan.Use a quality heavy pan or you will BURN your saute.

Not screaming hot, like for searing, but pretty hot so that a drop of water skittles around on the surface.

Maximum heat. Turn on the stove and wait until it is fully heated (a couple of minutes).

use some evoo , get it nice and hot , get the oil hot , kinda let it almost start to smoke, the place in whatever you are sauteeing , and grab a napking for when your mouth starts to water

Over medium-high heat. Add the food when drops of water 'dance' or sizzle when they touch the pan.

A great way to tell if your pan is the right temp. is to put your hand a few inches above it.You can feel if the heat being released is too hot.If you have it on med.for about 5 minutes or so,it should be heated enough.Run your hands under water,if a drop of water sizzles in the pan,it`s ready.Don`t add any oil until the water evaporates though,and always heat the pan,and then add the oil.
