Need a good recipe for dinner..?!
Answers: Ok I have been trying to find a good easy recipe for dinner. I know what I want to make but not how to go about it. I have boneless skinless chicken breast, white rice, tomatos and shredded cheese. I want to make sorta like a casserole type thing with these ingredients. Im going to cut up the chicken into pieces and fry with a little olive oil. Then Im unsure as to wether I should cook the rice before combining the ingredients and baking or if i should combine and add water ( or something else) and bake like that then top with cheese. Anyone have a recipe that would be good with this.. thanks in advance ;)

CHICKEN BREAST MILANESE
1 lb. boneless, skinless chicken breasts
1 egg, may substitute 2 whites if concerned about fat intake
3/4 c. Italian style bread crumbs
1/4 c. safflower oil
1/2 c. dry white wine
3 tbsp. lemon juice
Flatten chicken between 2 pieces waxed paper until 1/4 inch thick. Beat egg with 1 teaspoon water. Dip chicken in egg and coat with bread crumbs. Heat oil until hot. Add chicken, cook until golden and cooked through, about 5 minutes. Remove from pan. Drain off any remaining oil. Add wine and lemon juice. Stir over medium heat until slightly reduce, about 1 minute. Return chicken to skillet and heat 1 minute.
Serve garnished with lemon wedges and parsley.
Ranch Chicken Breasts Recipes
1/2 cup ranch salad dressing
1 tablespoon flour
4 boneless skinless chicken breast halves
1/4 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese
Combine dressing with flour in a shallow bowl. Coat each chicken breast with dressing mixture. Place on ungreased baking pan. Combine Cheddar and Parmesan cheeses; sprinkle on chicken. Bake at 375°F. for 25 minutes or until chicken is no longer pink in center and juices run clear
Chicken Parmigiana Recipe
Ingredients:
3 chicken breasts
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 cup dry bread crumbs
1 1/4 cup butter
1 can (10 1/2 oz) pizza sauce
6 slices mozarella cheese
parmesan cheese
If using whole chicken breasts, cut in to halves. In bowl beat egg, salt, and pepper. Dip chicken into egg mix. Then coat with crumbs.
In large skillet saute chicken in butter. Arrange chicken in pot. Pour pizza sauce over chicken.
Cover and cook on low 6 to 8 hours. Add mozzarella cheese, sprinkle parmesan cheese on top. Cover and cook 15 minutes.
CORONADO CASSEROLE
1 can (15 oz.) tomato sauce
1/2 c. chicken broth
1 c. chopped onions
1 can (4 oz.) diced green chilies
2 tsp. salt
1/2 tsp. EACH ground cumin & oregano
2 c. boned cooked chicken
3 c. cooked rice
1 c. sour cream
2 c. grated cheddar cheese
1 1/2 c. crushed corn chips
Combine tomato sauce, broth, onions, green chilies and seasonings in a microproof 1-quart casserole. Cook on HIGH (maximum power) for 10 minutes or until mixture boils. Stir in chicken. Set aside.
Mix rice and sour cream in a shallow 2-quart microproof casserole. Sprinkle with 1 cup cheese; pour sauce over all. Top with remaining cheese; sprinkle with corn chips. Cook on HIGH for 5 minutes. Makes 6 to 8 servings.
CONVENTIONAL METHOD: Combine tomato sauce, broth, onions, green chilies and seasonings. Cook over low heat about 10 minutes. Add chicken. Set aside. Mix rice and sour cream. Spoon into a shallow 2-quart casserole. Sprinkle with 1 cup cheese; pour sauce over all. Top with remaining cheese. Sprinkle with corn chips. Bake at 350 degrees for 25 minutes.
I make this dish which is;
chicken cut up floured and fried
white rice...minute rice is ok
Campbell's cheddar cheese soup
green onions and chopped peanuts
After you fry the chicken till brown and drain in dish with paper towels to drain. Keep warm
Make the rice
Warm up the cheddar cheese soup with half can milk, half can cream
Top the rice with the chicken pieces. Spoon on some of the cheddar soup and add some green onions and chopped nuts.

That being said you can adapt this recipe to be lower in calories and using some different ingredients. I would fry up the chicken bits, add the tomatoes (some herbs if you have them) and simmer. Cook the rice separately. Put the rice in a casserole, add the chicken tomato mixture and top with the shredded cheese. Put back in the oven till the cheese melts. Voila'
What is it with women and casseroles? If I were going to cook something with those ingredients this is what I would do. Cook the rice separately. Bake the Chicken in the oven with your favorite seasoning. (Garlic Salt and Cavenders are mine.) Serve the Chicken with the rice on the side (with butter). The tomatoes? I would use those for omelette's tomorrow morning.
Look, I think you need more flavor. Try making a mirepoix (diced celery, onion and carrot) After you brown the chicken remove it from the pan and add the mirepoix. Then when the onion has wilted, add the rice and saute it to coat with fat. Add drained, diced tomatoes (reserve the juice.) Then deglaze the pan with chicken broth/tomato juice broth at 1 and 1/2 times the amount of rice you used, add chicken, salt and other seasonings (perhaps some thyme or herbes de provence) and stir. Bring to a boil, cover and turn heat to very, very low for about 20 to 25 minutes. When the rice is done, fluff with a fork, add minced fresh parsley and cheese. Cover, for another 5 or 10 minutes and serve.
This is a quick chicken dish, takes about 30 mins.
1 tbs. veg. oil
4 boneless skinless chicken breast
1 can cream of chicken soup
1 1/2 cup water
1/4 tsp, paprika
1/4 tsp. ground black pepper
2 cups uncooked instant rice
2 cups of fresh or frozen broccoli florets
Heat oil in skillet. Cook chicken 10 mins. or until browned. Remove chicken.
Add soup, water, paprika and pepper. Heat to a boil. Stir in rice and broccoli. return chicken to pan. Sprinkle additional paprika and pepper over chicken. Cover and cook on low heat for 5 to ten mins. or until chicken is done.
